Chilled Pea Soup with Feta: A Summer Delight
When it gets too hot outside, it’s impossible to think straight, let alone cook properly. Times like these call for light, uncomplicated, yet nourishing cookery. This is specifically where dishes like chilled soups offer a helping hand and a delicious bite. Or better said, slurp!
Of course, when thinking of chilled soup, your mind is most likely to wander to gazpacho first, and not without reason. After all, the Spanish vegetable soup’s repuation precedes it. But other there are other soups that are just as chill. Take of course, our chilled pea soup with feta. It’s refreshing, slightly sweet and complements summer weather perfectly. Here’s how you to whip up this delightful dish.
First you need peas. Ideally, you’ll have fresh peas on hand. These pods not only look beautiful, but are a lot of fun to peel too. At least we think so! If you’re looking to be more low key, frozen is also fine. Just let them thaw before using. Once your peas are ready, briefly blanch them. This will help them retain their beautiful green while being cooked!
You’ll also need an onion and a clove of garlic. Finely chop these and sauté them in a little olive oil until translucent and fragrant. Now it’s time to blend the peas, onions, garlic and cold vegetable together. Purée everything well. Finally, add a dash of heavy cream, salt, pepper and some lemon zest. Now, all that’s left is to kick back, and let the soup chill in the fridge as you chill on the couch (or wherever you may be).
Once ready, simply pour and garnish with whole peas, finely crumbled feta, and some watercress if you’re feeling fancy. Fresh herbs like mint also taste great with it. Summer cooking can be this easy and satisfying!

Chilled Pea Soup with Feta

- Blender
Ingredients
- 1 lb peas fresh or frozen
- salt
- 1 onion
- 1 garlic clove
- olive oil
- 3½ cups vegetable broth
- ½ cup heavy cream
- pepper
- ½ organic lemon zest
- 5½ oz feta
- 1 handful watercress
- some mint chopped
Instructions
- Blanch the peas for 2 minutes in boiling salted water. Then plunge them into salted ice water.
- Peel and finely chop the onion and garlic.
- Heat some olive oil in a pot. Sauté the onion and garlic until translucent.
- Add the onions, garlic, peas, and cold broth to a blender and purée until smooth. Stir in the heavy cream.
- Season the soup with salt, pepper, and lemon zest.
- Chill the soup for about an hour.
- Crumble the feta and roughly chop the mint.
- Serve the chilled pea soup with watercress, feta, and mint.
