Chicken Salad with Mandarin Oranges
Ingredients
- 1 can (15 oz) mandarin oranges drained
- 1 can oz mushrooms drained
- 1 lb chicken breast
- ½ bunch of chives
- ⅔ cup plain yogurt
- ½ cup mayonnaise
- ½ tsp mustard
- salt and pepper
Instructions
- Drain the mandarin oranges and mushrooms.
- Meanwhile, heat salted water in a pot and cook the chicken for 15 minutes. Then, cut it into small pieces.
- Rinse the chives and chop them. Chop the mandarin oranges and mushrooms. Add all ingredients to a bowl with the chicken.
- Whisk together the yogurt, mayonnaise, and mustard, and season the dressing with salt and pepper.
- Combine the dressing with the other ingredients in the bowl and let the salad rest in the refrigerator for 30-60 minutes before serving.
