Chicken Bao Bun Gyros

Instructions:

For the bao bun dough:

  • 4 cups flour
  • ⅓ cup powdered sugar
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp dry yeast
  • ⅔ cup water, lukewarm
  • ⅓ cup whole milk, room temperature
  • 3 tbsp heavy cream, room temperature
  • black sesame seeds

For the chicken:

  • 4 chicken drumsticks
  • 1 bottle of hoisin sauce

For the peanut butter cream:

  • 8 oz salted peanuts
  • ¾ cup coconut milk, boiled

For the filling:

  • fried scrambled eggs
  • romaine lettuce
  • fresh herbs
  • radish
  • red cabbage
  • lemon juice
  • hoisin sauce
  • crushed red pepper
