Cheesy Hash Browns: Breakfast's #1 Sidekick Just Got Even Better

Who doesn't love going to their local diner for breakfast? The awesome jukebox tunes, the never-ending coffee refills, eggs your style, the choice of link or patty sausage, plus a generous heap of crispy, salty hash browns. Man, is that some good stuff! We would do this every day if it didn't also involve a half-hour wait for our favorite booth by the window.

And then... we created this recipe. The diner is still one of our great loves, but hash browns at home have a distinct advantage. And it's not just that we get to eat them in our pajamas. Check it out!

You'll Need (for 6 servings):

  • 4 medium potatoes
  • 2 eggs
  • 2 tbsp melted butter
  • 4.5 oz shredded cheddar
  • ⅓ cup chives
  • 1 clove garlic, chopped
  • 1 tsp oregano
  • salt und pepper

Here's How:

  1. Peel and grate the potatoes and add to a bath of ice water. Stir and soak for 10 minutes. This will make the potatoes extra crispy later.
  2. Pour out the water and squeeze out the excess. Add all the ingredients to the bowl and mix well. 
  3. Take a good handful of shredded potato mixture and form it into an oval, then place on a baking sheet. Bake for 20 minutes at 390 °F.

As if these crispy creations didn't have enough flavor on their own (and trust us, they do!), feel free to serve them with a side of sour cream or your favorite dipping sauce. If you plan on adding these to your usual weekend routine, try mixing it up a bit with sweet potatoes or a more exotic selection from the cheese counter. Remember, if you just wanted ordinary hash browns, you could have gone out for breakfast!
