Small bite, big flavor: Cheesecake Bites

After the holidays, most people are trying to cut back on calories. But for the moments when your sweet tooth demands attention, there's this recipe for chocolate-dipped cheesecake bites. Now you can whip up one of the world's most beloved desserts, served at a fraction of the normal portion size. 

You will need (for 56 bites):

  • 21 oz cream cheese
  • 4 eggs
  • 2/3 cup sugar
  • 1/4 cup cornstarch 
  • 1/2 tsp salt
  • 2 tsp vanilla extract
  • 9 oz cookie crumbs
  • 1 stick melted butter
  • 8 oz melted chocolate

Here's how:

  1. Place the cream cheese, eggs, sugar, cornstarch, salt and vanilla extract into a bowl and mix the ingredients until smooth. 
  2. Mix the cookie crumbs with the melted butter, and press the crumbs onto the bottom of a square springform pan. Pour the cream cheese mixture over the top and bake for 30 minutes at 320 °F.
  3. Remove the cake from the pan, cut it into small squares and dip the top of each square into the melted chocolate. Place the bites upright and let dry. 

If desired, replace the vanilla extract with cocoa powder for an extra chocolatey taste. Or feel free to dunk the entire bite in melted chocolate to create a cheesecake surprise! However way you choose to serve them, these adorable bites will be a hit at any party or gathering. The biggest challenge of course is limiting oneself to one or two... Enjoy!
