You'll Need:

For the pickled red onions:

  • ⅓ cup red wine vinegar
  • ⅔ cup water
  • 2 red onions, sliced
  • 2 tsp salt
  • 1 tbsp sugar
  • 4 bay leaves
  • 6 juniper berries (optional)

For the XXL hamburger bun:

  • ¾ cup milk, lukewarm
  • 2 tbsp fresh yeast or 1 tsp dry yeast
  • 4 cups flour
  • 1 egg
  • ¼ stick butter, softened
  • 1 whisked egg for the egg wash
  • 3 tbsp sesame seeds
  • 1 tsp salt
  • 1 tbsp sugar

For the bacon cheeseburger:

  • 11 oz ground beef
  • 4 slices of bacon
  • 2 slices of cheddar
  • ketchup & mustard
  • tomato slices
  • pickles
  • salt & pepper to taste

For the sides:

  • 11 oz frozen French fries
  • ketchup

Here's How:

1. For the pickled red onions, slice the red onions into thin rings and put them into a jar with a screw-on lid. Bring the remaining ingredients to a boil in a saucepan on the stove, then pour the mixture over the onions. Close the jar and let the onions soak for at least 2 hours. If you don't use them all in this recipe, the pickled red onions will keep for 2–3 weeks in the refrigerator. For the XXL hamburger bun, dissolve the fresh or dry yeast in the lukewarm milk. Place the flour, egg, butter, salt, and sugar in a large mixing bowl, pour in the yeast mixture, and knead the ingredients together using a hand mixer with a dough hook until a smooth dough forms. Once everything is combined, cover the dough and let it rest for 1 hour.

2. Preheat the oven to 325°F. Uncover the dough, knead it a second time, and mold it into the shape of a large, ovular bun. Let the dough rest for 10 minutes, then whisk an egg for the egg wash. Brush the egg wash over the dough and sprinkle sesame seeds on top. Place the XXL hamburger bun on a baking tray and the frozen French fries on another. Transfer both baking trays to the oven and bake the XXL burger bun and fries at 325°F for 35 minutes, until golden brown. Once the bun is done baking, let it cool.

3. Once the hamburger bun has cooled, cut out a square-shaped well on 1 side, saving the bread you cut out for later. On the other side, make 1 narrow, rectangular well and 1 small, circular well.

4. For the bacon cheeseburger, season the ground beef with salt & pepper and mold it into a square-shaped patty that will fit into the well in the XXL hamburger bun. Sear the hamburger on both sides and place 2 slices of cheddar cheese on top just before the burger is done. Fry the slices of bacon in the same griddle as the cheeseburger and place them on top of the melted cheese.

5. Reheat the French fries. Cover the bottom of the square-shaped well in the XXL hamburger bun with mustard and place the bacon cheeseburger on top.

6. Top the cheeseburger off with slices of tomato, pickles, and pickled red onions. Cover the top of the bun that you set aside earlier with ketchup and place it on top of the bacon cheeseburger.

7. Fill the rectangular well with French fries and the circular well with ketchup for dipping.

This juicy bacon cheeseburger with crispy fries, all served in an XXL burger bun is an easy way to bring the taste of fast food right into your home. Plus, you get to be a little creative in the kitchen!
