How to Bake Our Cheddar-Basil Chili Cookies

A cozy TV evening on the sofa with your favorite series shouldn’t be without the right snacks. But it doesn’t always have to be potato chips, popcorn and the like. Our homemade cheddar basil cookies with chili also provide plenty of nibbling fun.

The base of the cookies is a quick shortcrust pastry, which is kneaded crumbly from flour, cold butter and salt. Add grated cheese, chopped basil and chili flakes and roll the dough into a ball, which must rest wrapped in plastic wrap in the refrigerator for an hour before baking. Then all you have to do is roll out the dough thinly, cut out circles (or other shapes) and bake the savory cookies in the preheated oven until golden brown for about 15 minutes.

The recipe for the cheddar basil cookies with chili can of course also be easily adapted to your taste preferences. For example, if you like it less spicy, simply leave out the chili. For an even more Mediterranean note, you can also swap out the cheddar with grated parmesan and a touch of grated lemon zest is sure to add a fresh note. Also try sesame or poppy seeds for a nutty aroma.

Cheddar-Basil Cookies with Chili

Ingredients
  

  • ½ cup cold butter
  • cups all-purpose flour
  • ½ tsp salt
  • ¼ cup fresh basil chopped
  • cups sharp cheddar cheese shredded
  • 1 tsp dried chili flakes
  • 1-2 tbsp cold water
  • 1 egg yolk for brushing

Instructions
 

  • Preheat oven to 350°F. Line a baking sheet with parchment paper.
  • Cut the butter into small pieces and add it to a bowl with the flour and salt. Using your hands, quickly knead the ingredients until a crumbly dough forms.
  • Wash and chop the basil.
  • Add the grated cheddar, chili, and basil to the dough crumbs and mix well.
  • Add a little cold water if the dough is too dry. Then quickly knead the dough together and shape it into a ball. Wrap the dough in plastic wrap and place it in the refrigerator for an hour.
  • Roll out the dough on a floured surface until it's about ¼ inch thick.
  • Use a cookie cutter to cut out round shapes from the dough and place them on the prepared baking sheet.
  • Whisk the egg yolk and brush it over the surface of the cookies.
  • Bake the cookies for about 15 minutes, until lightly browned, and let them cool completely before serving.
