This tasty white vegetable is delicious any time of year. But unfortunately, it’s often seen as little more than a side dish. In the following seven recipes, cauliflower finally takes center stage. So turn the house lights down and let’s turn the spotlight up on this under-appreciated favorite!
1. Stuffed Cauliflower
You’ll need:
- 1 cauliflower
- 1 red onion
- 1 green pepper
- 3 slices cheese
- 3 slices cooked ham
- 2 tbsp butter
- 2 tbsp flour
- 8½ fl oz milk
- salt and pepper
- nutmeg
- 3½ oz grated mozzarella
Here’s how:
- Cook the cauliflower whole.
- Cut the onion and the pepper into wedges. Then roll the three slices of cheese up in individual pieces of ham and then cut the rolls in half.
- Hold the cauliflower florets apart so that you can stick the onion and pepper wedges, as well as the cheese and ham rolls, into the gaps. Divide everything evenly over the whole cauliflower head.
- Melt the butter in a pan and add the flour while stirring steadily with a whisk. Pour in the milk and season with salt and pepper. Grate a little fresh nutmeg into the sauce and cook it until it thickens.
- Now pour the sauce over the stuffed cauliflower and sprinkle mozzarella on top. Then bake the cauliflower for 20 minutes in a convection oven at 340°F.
2. Marinated Cauliflower
You’ll need:
- 1 head of cauliflower
- 1 tbsp oil
- 1¼ cups greek yogurt
- 2 cloves garlic, chopped
- 1 tbsp cayenne pepper
- 1 tbsp cumin
- 1 tbsp curry powder
- 2 tsp salt
- 1 tsp pepper
- juice and zest of one lemon
Here’s how:

- Preheat the oven to 400°F and grease a baking sheet with oil.
- Wash the head of cauliflower and remove the leaves and the stalk.
- In a large bowl, mix the yogurt and the garlic, then add the lemon juice and zest. Now add the rest of the spices and mix well.
- Dunk the head of cauliflower into the mixture, and move it around until it’s completely covered. You can also use a basting brush to apply the mixture.
- Finally, place the cauliflower on the greased tray and bake in the oven for 40-45 minutes.
3. Hearty Cauliflower Muffins
You’ll need (for 6 portions):
- 5½ cups cauliflower
- nutmeg
- 1 clove of garlic, chopped
- salt and pepper
- 8 eggs
- 1½ cups grated cheddar
- 4 slices of bacon
Here’s how:
- Grate the cauliflower into small pieces and season with nutmeg, garlic, salt and pepper. Add two eggs and the cheese before kneading the mixture into a dough.
- Press the dough into the molds of a muffin pan. A mold is one portion. Bake the dough at 330°F for 12 minutes.
- While the dough is baking, fry both sides of the bacon until it’s crispy and cut it into small cubes.
- Once the dough is baked, fill the molds with bacon and break an egg into each one. Bake the muffins once more at 285°F for six minutes.
4. Cauliflower BBQ Bites
You’ll need:
- 1 head of cauliflower
- 1 cup flour
- 3 eggs, beaten
- 4 cups breadcrumbs
For the sauce:
- 1 cup BBQ sauce
- ½ cup brown sugar
- pepper
- ½ a lemon
- 1 garlic clove, finely chopped
Here’s how:
- Break up the head of cauliflower into small florets. Dunk the florets in the flour, then the egg, and then the breadcrumbs. Bake for 20 minutes at 355°F.
- Mix the sugar, pepper, garlic, and a squeeze of lemon into the BBQ sauce and heat it up in a pot.
- Mix the baked cauliflower bites into the warm BBQ sauce and serve with a dip, e.g. ranch dressing.
5. Cauliflower Casserole
You’ll need:
- butter
- 3 garlic cloves, chopped
- ⅛ cup flour
- 1¾ cups milk
- 3½ oz cream cheese
- 7 oz grated cheddar cheese
- 2 cooked cauliflower heads
- bacon
- salt and pepper
- spring onions
Here’s how:
- Melt the butter in a pan, and stir in the garlic and flour.
- Pour the milk into the pan, and stir in the cream cheese. Now add about 5 oz of the grated cheddar cheese and stir once more, until the cheese is completely melted.
- Place the cooked cauliflower into a casserole dish and pour in the cheese sauce!
- Add the bacon (already cooked), salt and pepper and mix everything together.
- Finally, sprinkle the rest of the cheese on top, along with a bit more bacon and chopped spring onions. Now bake at 320°F for 40 minutes.
6. Cauliflower Salad
You’ll need (for 3 portions):
For the salad:
- 1 head of cauliflower
- salt and pepper
- 3 tbsp olive oil
- 3 hardboiled eggs
- 5 oz celery, cubed
- 1 red onion, diced
For the dressing:
- ¾ cup plain yogurt
- 1 tbsp mustard
- 1 tbsp honey
- 2 tbsp fresh dill, chopped
- 1 garlic clove, chopped
- 3 tbsp olive oil
- juice from half a lemon
Here’s how:
- Cut the cauliflower florets into bite size pieces and discard the stalk. Spread the florets onto a baking tray, season with salt and pepper and drizzle with olive oil. Toss to coat evenly and then bake at 390°F for 15 minutes.
- Cut up the eggs and add them to a large bowl with the baked cauliflower florets, the celery and the onion.
- Now for the dressing: add all the ingredients to a mixing bowl or a salad dressing bottle and stir (or shake!) until a smooth consistency is achieved. Pour the dressing over the salad and give it a good few turns with a spoon until it is well coated.
7. Cheesy Cauliflower Snacks
You’ll need:
- 1 head of cauliflower
- 2 eggs
- ½ tsp oregano
- 2 garlic cloves, chopped
- salt and pepper
- 14 oz grated mozzarella
- 1 cup grated parmesan
- chopped parsley
Here’s how:
- Grate the entire head of cauliflower.
- Add all the ingredients (using only 3½ oz of the mozzarella) to the grated cauliflower and salt and pepper to taste. Mix thoroughly and press the mixture onto a lined baking tray. Bake at 340° F for 25 minutes.
- After baking, sprinkle the rest of the mozzarella on top, along with some pepper. Bake once more for 10 minutes at 340° F.
- To serve, cut your culinary creation into small portions and garnish with fresh parsley, with a dip or some ketchup for the finishing touch.
