Buttermilk Lemon Sheet Cake
Ingredients
- 1 organic lemon
- 2⅓ cups all-purpose flour
- 2 tsp baking powder
- 1 pinch salt
- 1 cup butter softened
- 1 cup sugar
- 1 tsp vanilla extract
- ⅔ cup applesauce
- ¾ cup buttermilk
Instructions
- Preheat the oven to 375°F.
- Give the lemon a good wash, then zest and juice it.
- In a bowl, whisk together the lemon zest, flour, baking powder, and salt.
- Cream together the butter, sugar, and vanilla sugar until light and fluffy. Gradually incorporate the applesauce and lemon juice into the batter.
- Add the dry ingredients and buttermilk to the wet ingredients. Mix until just combined.
- Grease a baking sheet and spread the batter evenly onto it. Once ready, immediately bake for 25 minutes.
Notes
- After baking, optionally prick the cake a few times with a fork and brush it with lemon juice mixed with a little sugar.
- You can decorate the cooled cake with powdered sugar or icing.
