Buttermilk Lemon Sheet Cake

Ingredients
  

  • 1 organic lemon
  • 2⅓ cups all-purpose flour
  • 2 tsp baking powder
  • 1 pinch salt
  • 1 cup butter softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • cup applesauce
  • ¾ cup buttermilk

Instructions
 

  • Preheat the oven to 375°F.
  • Give the lemon a good wash, then zest and juice it.
  • In a bowl, whisk together the lemon zest, flour, baking powder, and salt.
  • Cream together the butter, sugar, and vanilla sugar until light and fluffy. Gradually incorporate the applesauce and lemon juice into the batter.
  • Add the dry ingredients and buttermilk to the wet ingredients. Mix until just combined.
  • Grease a baking sheet and spread the batter evenly onto it. Once ready, immediately bake for 25 minutes.

Notes

  • After baking, optionally prick the cake a few times with a fork and brush it with lemon juice mixed with a little sugar.
  • You can decorate the cooled cake with powdered sugar or icing.
