Giant Brie Mac And Cheese Pie

Macaroni and cheese is the type of dish that can transport you to your childhood in just one bite. And because we love a good blast from the past, we thought it was high time to take this classic to the next level. This mac & cheese fusion baked inside a giant wheel of brie cheese will become your new go-to way to eat your favorite comfort food, and you may even create some new memories along the way!

You'll Need:

  • 14 oz macaroni 
  • 7 lb brie cheese wheel
  • 2 tbsp butter
  • 2 tbsp flour
  • 1⅔ cups milk
  • 1 cup shredded cheddar cheese
  • 1 pinch of mixed peppercorns
  • 1 tbsp chopped parsley
  • 2 round sheets of puff pastry
  • 1 whisked egg for the egg wash

Here's How:

1. Cook the macaroni according to the instructions on the package. Cut the top off of the wheel of brie cheese and set the "lid" aside for later. 

2. Scoop the brie out of the cheese wheel and set it aside for later.

3. Melt the butter in a pan over medium heat. Stir in the flour and gradually pour in the milk. Add the scooped-out brie that you set aside earlier and the shredded cheddar cheese and season with mixed peppercorns. Once the cheese has melted, stir in the cooked macaroni noodles and parsley.

4. Spoon the mac & cheese into the hollowed-out wheel of brie and place the cheese "lid" that you set aside earlier on top.

5. Place the stuffed cheese wheel in the center of 1 of the round sheets of puff pastry, brush some of the egg wash over the uncovered dough, and fold the edges of the puff pastry up over the stuffed cheese wheel.

6. Place the second round sheet of puff pastry on top of the stuffed cheese wheel and press the hanging edges into the sides of the cheese wheel. Brush the rest of the egg wash over the puff pastry and use a fork and glass to create a special pattern in the dough. Place the brie mac & cheese pie on a baking tray lined with parchment paper, transfer the pan to a preheated oven, and cook at 300°F for 40-50 minutes.

Instead of using one large wheel of brie, you could also try making this recipe with smaller wheels for single serve portions of mac & cheese. No matter if you go big or small – this mac & cheese-stuffed baked brie is un-brie-lievably delicious!
