Cheesy Bacon & Bratwurst Breakfast Casserole

There's nothing quite like treating yourself to a big breakfast, complete with all of your favorite ingredients. We're guessing eggs, cheese, bacon & sausage are some of the usual suspects on your breakfast menu. They're absolutely on ours too, which is why we came up with this easy-to-make, extra cheesy, extra delicious bacon & bratwurst breakfast casserole. Try this yummy dish and start your day off with a bang!

You'll Need:

For the eggs:

  • 4 eggs
  • ¾ cup milk
  • ¼ cup water
  • 1 cup flour
  • 1 tbsp mayonnaise
  • ½ tsp salt
  • ½ tsp pepper
  • ½ green bell pepper, chopped
  • ½ red bell pepper, chopped
  • 2 tbsp chopped parsley
  • 1 cup shredded mozzarella for the topping

For the cheesy bacon-wrapped bratwurst:

  • 5 bratwurst sausages
  • 4 oz cheese, sliced
  • 10 strips of bacon
  • cooking oil for frying

For the fried onions:

  • 1 large yellow onion
  • 1 tbsp paprika
  • ¼ cup flour
  • cooking oil for frying

Here's How:

1. For the egg layer, chop the green and red bell peppers. Mix together the eggs, milk, and water, then gradually add in the flour. Once everything is combined, stir in the mayonnaise, chopped bell peppers, salt, pepper, and chopped parsley. Let the mixture sit for 15 minutes.

2. Preheat the oven to 425°F. Make a slice about 2 inches long down the center of each bratwurst sausage. Slice the cheese into strips of the same length, then stuff them inside the slit in each sausage.

3. Wrap each cheese-stuffed bratwurst in 2 slices of bacon, then fry them in a baking pan on all sides until the bacon is crispy.

4. Pour the egg mixture over the stuffed bratwurst, transfer the baking pan to the oven, and bake the breakfast casserole at 425°F for 25 minutes. While the casserole is baking, heat a pot filled with cooking oil on the stove. Peel the large yellow onion and slice it into half rings. Stir together the paprika and flour, dip the slices of onion in the mixture, then fry them in hot cooking oil until golden brown.

5. After 25 minutes, remove the casserole from the oven and top it off with shredded mozzarella and fried onions. Transfer the baking pan back to the oven and bake the casserole for another 10 minutes.
