Low-fat blueberry bites: a delight for your palate and your figure

Pancakes are beloved by many, and can be prepared for any meal of the day. Not only are they quickly and easily made, but you can customize them with your topping of choice! In short, it would be quite easy to enjoy them all day long. If pancakes are close to your heart, then let this recipe satisfy you even further! 

You will need:

  • 1 cup flour 
  • 1 tsp. baking powder
  • 2 tsp. sugar
  • 1 whisked egg
  • 1/2 tsp. vanilla extract
  • 1/2 cup milk
  • 2 tbsp. melted butter 
  • about 40 blueberries

Here's how:

Before you start preparing the batter, preheat the oven to 375°F. Mix the flour, baking powder, and sugar. In a separate bowl, mix the egg, vanilla, milk, and butter. Now combine both the dry and wet ingredients in a large bowl and mix well.

Scoop your batter into a mini muffin or cake pop pan. Fill only 2/3 of the muffin mold so that the batter does not overflow. Add two blueberries into every batter-filled mold, or however many you like! But careful not to add too many berries, otherwise your batter might be a bit mushy. Now bake the bites for about 15 minutes.

If you want to add a little something extra, serve your blueberry bites with powdered sugar, or drizzled with a sweet glaze. They taste delicious, whether straight from the oven or cooled. Tip: You can also bake many of these tasty bites and freeze them for your next picnic or party!

These little bites are not difficult to make. Because they contain very little sugar and fat, they're also not too bad for your waistline. And you can of course prepare them with any berry you like!
