Super Juicy BBQ Pork Leg Served With Homemade Coleslaw

This recipe is one to make if you're ready to close out your summer with a bang. Thanks to a crazy invention — the meat marinade injector — this grilled BBQ pork leg will be the juiciest piece of meat you've ever made, guaranteed. With a delicious dry rub and apple juice marinade, you'll get to channel your inner pit boss. And to make it a meal, we threw in a recipe for homemade coleslaw. Is your mouth watering yet? You'll Need:

For the BBQ pork:

  • 1 pork leg (about 12-14 lbs)
  • salt for the skin

For the apple juice marinade:

  • ⅓ cup apple cider vinegar
  • ⅓ cup apple juice
  • 2 tbsp Worcestershire sauce
  • 4 tbsp lime juice
  • 1 tbsp Tabasco
  • 3 tbsp salt
  • 1 tbsp paprika
  • meat marinade injector

For the dry rub:

  • 1½ tbsp salt
  • 1½ tbsp paprika
  • 1½ tbsp brown sugar
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp ground mustard

For the coleslaw:

  • 1 head of cabbage, shredded
  • 2 large carrots, shredded
  • 1 onion, diced
  • ⅔ cup sour cream
  • ⅓ cup mayonnaise 
  • salt & pepper to taste
  • sugar to taste

Here's How:

1. Score the skin of the pork leg by cutting diagonally across the surface.

2. Mix together the ingredients for the marinade and fill the barrel of the injector with the marinade by pulling back the plunger.

3. Turn the leg over and inject the meat with the marinade at several different points.  

4. Mix the dry rub ingredients together in a bowl and rub it into the underside of the pork leg. 

5. Turn the leg back over to the skin side and rub with salt. Place the leg on a grate elevated above the grill surface and cook on indirect heat at 400-450°F for 1½ hours. After the first round of cooking, close the grill vent and add more charcoal if necessary. Altogether, the pork leg should cook for 2-3 hours depending on its weight. While the pork leg is cooking, prepare the homemade coleslaw. Remove the outer leaves from the head of cabbage, then wash it and chop it up into strips, being sure to remove the core beforehand. Mix the cabbage with the other coleslaw ingredients and chill in the fridge until ready to serve. Now you've got a BBQ feast fit for a family!
