You'll go absolutely bananas for them!

Yield: 2
Prep Time: 15 minutes
Cooking Time: 20 minutes
Difficulty Level: Moderate

  • 2 waffle cones
  • 3 oz ice cubes
  • 1 banana, roasted
  • 6 oz vanilla pudding (2 vanilla pudding cups)
  • 1 banana, sliced
  • grated chocolate, tempered chocolate & nut topping to decorate

1. Place 1 of the bananas in a preheated oven and cook at 325°F for 15 minutes. Steam the waffle cones over a water bath until they are pliable.

2. Add the ice cubes, vanilla pudding, and roasted banana flesh to a blender and puree until a smooth cream forms. Unfold the steamed waffle cones and spread the banana ice cream over the center section of the flattened waffles, making sure to leave the edges free. Place a row of banana slices down the center of each waffle, garnish with grated chocolate, and fold the edges up towards the center.

3. Roll the banana split cannoli in tempered chocolate, followed by nut topping, and let the chocolate harden before serving.

This super simple modification on the classic cannoli is as impressive as it is easy to make. And don't worry, splitting only comes to play in the name of this dessert, so you can have as much as you want!
