Banana Cake with Buttercream: From Humble To Heavenly

The humble banana gets a bad rap sometimes for being a bit boring. I mean, you buy a bunch of them intending to be all "healthy" and before you know it, you've ignored them for a week and those brown specks begin to taunt you... then the guilt starts to kick in. Well, next time you're in the produce section and those bright yellow bundles catch your eye, take a vow right then and there to transform them into a glorious dessert. You won't be avoiding them then, we promise!

You will need:

  • 5 bananas
  • 3 eggs
  • 1⅛ cups sugar
  • ½ cup vegetable oil
  • 3½ oz crème fraîche
  • 2½ cups flour
  • 2½  tsp baking powder
  • ½ stick butter
  • 3½ oz cream cheese
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • chocolate sprinkles

Here's how:

  1. Peel four of the bananas and mash with a fork in a medium sized mixing bowl.
  2. For the batter, mix the eggs, sugar and vegetable oil in a second mixing bowl until frothy. Stirring constantly, add the crème fraîche, then flour, mashed bananas and baking powder. Pour the batter into a rectangular cake pan or casserole dish and bake at 350 °F for 17 minutes. 
  3. For the buttercream, mix the butter, cream cheese, powdered sugar and vanilla extract.
  4. When the cake has cooled, spread the buttercream evenly over the top and then garnish with slices from the remaining banana. As a finishing touch, add a top layer of chocolate sprinkles.
