Bagel Quiche: Everything You Need For Breakfast In One Delicious Place

You might not usually eat a bagel for breakfast. Or if so, a lot of people know exactly what they want on their first bagel of the day. But even if you're one of those habitual everything-bagel-with-lox-chive-cream-cheese-and-a-cigarette nosher (or whatever your particular bent) — pay attention! This is serious. You don't want to miss this ring of perfection: it's filling, healthy, and so yummy! Everything you want to start the day with energy and balance. It's also really simple, and you can prep it the night before.

You'll Need (for 1):

  • 1 bagel
  • 1 oz red bell pepper
  • 1 diced mushroom
  • 1 oz cooked broccoli
  • ¼ cup shredded cheddar
  • 1 egg
  • salt & pepper

Here's How:

  1. Slice the bottom off the bagel and then hollow out the soft bread inside, leaving a sturdy ring.
  2. Place all the other ingredients in a bowl and mix them well. Then spoon them into the hollowed out bagel.
  3. Bake it for 15 minutes 320 °F. That's literally it.
