Savoy Cabbage Quiche With Bacon-Wrapped Apples

This recipe uses pizza dough in a way you've probably never seen or heard of before, namely in the form of a comforting, wintery quiche! This particular dish features a heavenly combination of savory savoy cabbage and sweet and salty apple slices wrapped in bacon, all tucked in between layers of pizza dough and baked until golden brown. 

You'll Need:

For the pizza dough:

  • 1 tbsp dry yeast
  • 5 cups flour
  • 2 tsp salt
  • ¼ cup olive oil
  • 1 cup water, lukewarm

For the filling:

  • 1 medium head of savoy cabbage
  • 2 cups shredded mozzarella
  • ½ tsp cumin
  • salt, pepper & nutmeg to taste
  • 4 eggs
  • ¾ cup heavy cream
  • 12 oz bacon
  • 3 apples

  • baking beans
  • 10-inch springform pan

Here's How:

1. For the pizza dough, first dissolve the yeast in lukewarm water. Mix the flour and salt in a separate bowl, make a well in the center, pour in the yeast mixture and olive oil, and knead until smooth. Cover the pizza dough with a towel and let it rest in a warm place for 1 hour until the dough has doubled in size. Meanwhile, chop up the cabbage, boil it in salted water for 3 minutes, and then shock it in cold water. Transfer the cabbage to a clean dish towel and squeeze out as much moisture as possible. Mix the cabbage with the mozzarella and season with cumin, pepper, and nutmeg.

2. Mix the eggs and heavy cream and season with salt and pepper to taste.

3. Cut 2 apples into wedges, wrap half a slice of bacon around each wedge, and fry the bacon-wrapped apple wedges on both sides.

4. Roll out ⅔ of the pizza dough and transfer it to a greased and floured springform pan. Trim off any excess dough, but leave enough to form a nice crust.

5. Cover the dough with a piece of parchment paper and weigh it down with baking beans.

6. Roll the rest of the pizza dough out into 2 round circles which should be large enough to fit in the springform pan and bake them for 10 minutes at 425°F. Allow the pizza dough to cool, then remove the baking beans and parchment paper. Spoon a layer of cabbage on top the pizza dough, cover it with half of the bacon-wrapped apple wedges, and top with another layer of cabbage.

7. Pour in ⅓ of the egg and heavy cream mixture and cover it with another layer of baked pizza dough.

8. Add another layer of cabbage, bacon-wrapped apples, cabbage, egg and heavy cream mixture, and pizza dough.

9. Cover the second layer of pizza dough with more cabbage and the rest of the egg and heavy cream mixture. Bake the whole thing for 35 minutes at 350°F.  In the meantime, cut the third apple into slices. After 35 minutes, put the apple slices and some bacon slices on top of the quiche and cook for another 15 minutes.

This recipe goes to show that there's much more you can do with basic pizza dough than just top it with a bunch of cheese and tomato sauce and throw it in the oven. There's so much going in this quiche, and yet all the flavors go together incredibly well. A delicious and hearty quiche is the perfect way to beat the winter blues, trust us!
