Asparagus season is here so try out this asparagus pesto salad

It’s asparagus season and many people want to make the most of this short period in the year. Asparagus pesto salad is an unusual combination, combining the fine taste of asparagus with fresh and nutty seasoning from the pesto. The result will surprise you - and you won’t be able to get enough of it because making it is super easy.

Ingredients for the pesto:

  • 1 bundle of basil
  • 1/3 cup of pine nuts
  • 2 cloves of garlic
  • 1/2 cup of olive oil
  • 1/2 cup of parmesan

Ingredients for the salad:

  • 14 spears of green asparagus
  • 6 oz. of sun-dried tomatoes
  • 1 bundle of rucola
  • 8 oz. of pasta

First, the asparagus needs to be cooked. To do this, cut them into thirds and add them into a pan.

Then drizzle some olive oil, salt and pepper over it. The green asparagus is cooked until they are lightly browned on the sides.

While the asparagus cooks, add olive oil, pine nuts, garlic cloves, parmesan and the bundle of basil into a mixer. Then press the button and mix well. The pesto is as easy as that!

Cook 8 oz. of pasta and pour it into a bowl. Then add in the pesto, asparagus, sun-dried tomatoes and rucola. Now mix it all together so that the ingredients are dispersed evenly among the noodles. 

Then put the pasta salad onto a plate and garnish it with some rucola and a drop of olive oil. Done!

The basil adds its own very unique and fresh note to the pesto and tastes like something straight out of Italy while the pine nuts impart a nuttiness to the whole dish. But perhaps the best part is that this recipe can be done very quickly and it’s even super healthy.
