Our apple-mango bars are just what you need as summer transitions into fall. Though they may seem like they come from different worlds, there’s a certain magic that happens when autumnal and subtle apple meet the bright and bold summer mango. It’s exactly that magic that you’ll taste in every bite of our fruity and creamy apple-mango bars. With a good helping of rolled oats, you’ll find that these bars will leave you bright eyed and bushy-tailed no matter what time of day you find yourself in.

Our Apple-Mango Bars: The Perfect Bite

Our apple-mango bars could also pass as a cake. But we call them bars because you can cut them into uncomplicated small rectangles and take them anywhere. They’ve certainly become a favorite accessory of ours. Plus, bars, this recipe included, usually have some creamy component. This one is wonderfully fresh thanks to the combination fruit and irresistibly rich yet tangy given its cream cheese-yogurt mix.

The base of these bars is a buttery shortcrust pastry, which not only keeps the bars steady, but provides the perfect crunch factor. When making our apple-mango bars, you’ll want to pre-bake the crust for ten minutes so that the bars will have that desired ‘crunch.’

Making the creamy filling is as simple and delicious act and as the crowning finish to the bars, we advise making a crumble consisting partly of rolled oats to make the dish crispy from top to bottom. Once ready, bake the bars for another 35 minutes and kick back knowing something yummy your way comes!

An extra tip: Depending on your own preferences, you can of course add chopped nuts to the crumble topping if you like it even nuttier. Since our apple-mango bars are also a refreshing treat when chilled, you can prepare them wonderfully as a snack for work or as a delicious treat for a late summer picnic.

Apple-Mango Bars

Equipment

  • 1 13×9 in, baking pan

Ingredients
  

For the dough:

  • 2⅓ cups all-purpose flour
  • ½ cup sugar
  • 1 pinch of salt
  • 10 tbsp cold butter
  • 1 egg

For the filling:

  • 2 apples
  • 1 mango
  • 1 cup cream cheese
  • ½ cup yogurt
  • 2 eggs
  • cup sugar
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice

For the crumble topping:

  • cups all-purpose flour
  • cup rolled oats
  • cup brown sugar
  • 1 tsp cinnamon
  • 7 tbsp butter

Instructions
 

  • Preheat the oven to 350°F and grease a 13×9 inch baking pan or line it with parchment paper.
  • Place the flour, sugar, salt, and cold butter (cut into small pieces) into a bowl. Knead the butter into the flour mixture with your fingers until coarse and crumbly.
  • Wrap the dough in plastic wrap and chill for 30 minutes.
  • Afterwards, roll out the chilled dough to fit the pan and gently press it into the pan. Make sure that the dough forms an even layer. Prick the dough several times with a fork and then pre-bake the crust for 10 minutes.
  • Meanwhile, peel, core, and dice the apples. Peel and dice the mango.
  • In a bowl, combine the cream cheese, yogurt, eggs, sugar, vanilla extract, and lemon juice, Mix until smooth and then fold in the diced apples and mango.
  • For the filling: In another bowl, combine the flour, rolled oats, brown sugar, and cinnamon. Add the cold butter (cut into small pieces) and knead it until coarse and crumbly.
  • Pour the filling evenly over the pre-baked crust. Sprinkle the crumble topping evenly on top.
  • Bake at 350°F for 35-40 minutes or until the crumble topping is golden brown.
  • Let the apple-mango bars cool slightly before cutting into squares and serving. Enjoy!
