Strawberry season is here and in full-bloom! Now we can finally bake strawberry cakes in all shapes and sizes, like our quick strawberry yogurt cake. It’s a simple and sweet bite, and only takes 15 minutes to prepare.

Do strawberry cakes also remind you of dog days and long summer nights? For me, there’s no summer picnic, barbecue, or get together without some strawberry concoction. We have to give this berry it’s dues! For days and times when I am low in energy, but still need to get my strawberry fix, its our strawberry yogurt recipe that calls beckons me!
Strawberries and yogurt make for a true power couple. Both ingredients bring a good portion of freshness and lend a fantastic moistness to the cake. If you want to bake our version of the strawberry yogurt cake, what you’ll need above all else is a good portion of fresh strawberries. Otherwise, Greek yogurt, brown sugar, eggs, vanilla, spelt flour, butter, baking powder, and powdered sugar should also be on your shopping list.
For your tools, make sure to have a 9-inch springform pan on hand. Grease the sides and line the bottom with parchment paper. This will prevent the cake from sticking to the pan as it bakes.
Now it’s time to start making the batter. Using a mixer, cream together the butter and sugar with salt and vanilla extract. Once creamy, add the eggs and then fold in the yogurt. In a separate bowl, mix the flour with the baking powder. Slowly add the dry ingredients to the wet and keep mixing until a smooth batter forms. Just make sure not to overmix!
Once ready, pour the batter into the pan. Now, come the strawberries! Simply add washed and halved strawberries into the mix. No need to stir. Finally, bake the strawberry yogurt for 35 minutes. For an extra sweet kick, you can sprinkle powdered sugar over the strawberry yogurt cake before serving. Enjoy!

Strawberry Yogurt Cake
Equipment
- 1 (9-in.) springform pan
Ingredients
- 14 oz strawberries
- 2 tsp vanilla extract
- 3½ tbsp butter
- ¾ cup brown sugar
- 1 pinch of salt
- 3 eggs
- ⅔ cup Greek yogurt
- 1¾ cups spelt flour
- 1½ tsp baking powder
- powdered sugar optional
Instructions
- Preheat the oven to 350°F. Line the bottom of a 9-inch springform pan with parchment paper and grease the sides with butter. Wash, hull, and halve the strawberries.
- Using a mixer, cream together the butter and sugar with salt and vanilla extract.
- Add the eggs and beat until creamy. Fold in the yogurt.
- Whisk together the flour and baking powder, then fold the dry ingredients into the batter. Be careful to mix only until smooth.
- Pour the batter into the pan, smooth the top, and arrange the strawberries cut-side up on the batter.
- Bake for 35 minutes on the middle rack. Let it cool completely and dust with powdered sugar before serving.
