Our Nacho Salad Recipe: Crispy, Spicy and So Good Too

Today we’re tacing the taco to the bowl. Brimming with fresh vegetables such as tomatoes and crunchy lettuce, beans, lip-smacking fried ground beef, a mix of salsa and sour cream, and of course crispy tortilla chips, you’ll find that this salad has everything. It’s not every day that a dish satisfies both the eye and the stomach, but our nacho salad does just that.

But first, some important information: As is so often the case, our recipe is also a sounding board. Our nacho salad also tastes wonderful with other ingredients. We at Scrumdiddlyumptious have chosen tomatoes, peppers, avocado, corn, beans, red onions and lettuce, as well as ground beef and tortilla chips, of course. But you can just as easily use other ingredients and, for example, swap black beans for kidney beans.

On that note, let’s talk about bringing the heat with this nacho salad. We personally see the salsa and sour cream as the dressing for this dish. This means that it can fittingly be adjusted, say with chopped chilies, garlic, hot sauces and the like. And if you love cheese, sprinkle some grated cheddar or favorite cheeses over your salad before serving! The point is that this dish, as always, should be best suited to your tastes. Ingredients
  

  • 1 lb ground beef
  • oil for frying
  • 1 tbsp taco seasoning
  • 1 small can corn
  • 1 can black beans
  • cups cherry tomatoes
  • 2 lettuce hearts
  • 1 bell pepper
  • 1 red onion
  • 2 avocados
  • 1-2 lime(s)
  • salt & pepper
  • 1 jar salsa
  • 1 cup sour cream
  • 1 bag tortilla chips

Instructions
 

  • Brown the ground beef in oil until crumbly and season with the taco seasoning.
  • Meanwhile, rinse the corn and beans. Then, drain.
  • Wash the tomatoes, lettuce and bell pepper and chop everything up. Peel the onion and chop it, or slice it into rings. Cut and chop the avocado.
  • In a bowl, layer the vegetables and beans. Squeeze the lime over them and season with salt and pepper.
  • Spread the ground beef on top. Top with sour cream and salsa.
  • Finally, crumble the tortilla chips and sprinkle them over the salad before serving.

Notes

  • If you like it spicy, you can add a chopped chili pepper to the salad.
  • Optionally, you can sprinkle grated cheese over the nachos before serving.
  • If you like, you can also substitute guacamole for the avocado.
