Sugar snap peas are one of those vegetables that, in my opinion, have one of the most beautiful names. It sounds just like how it tastes! Crips and seductively sweet. Plus, they’re unique. Unlike other lentils, beans, and the like, you can eat the pod of this type of pea. This makes them an ideal snack, but unfortunately also means that they are rarely utilized as a full-fledged vegetable.
That shouldn’t be the case, because sugar snap peas are really healthy and should be on our menus much more often. They are rich in protein, of course, they are legumes. They are also brimming with vitamins K, C and B1. These peas also a source of iron, phosphorus, and potassium. All in all, these peas are tiny but mighty!
To make our delicious sugar snap pea salad with feta, you only need a few other ingredients. Feta, for starters, is a must. It’s best not to cut it, but to crumble. This way the salad will be punctuated with bits of the cheese’s signature brininess, but not overwhelmed by it. A handful of roasted peanuts adds a crunchy texture and a nutty respite. Fresh mint gently supports the sweetness of the pods while adding a refreshing break to the bowl. Chili peppers and lemon zest will round off the salad with a good dose of heat, edge, and of course, freshness.
In comparison to the salad, the dressing is more subdued to make sure the flavor remains balanced. To make it, simply mix olive oil, lemon juice, salt, pepper, and a touch of honey. Once ready, it is important that you let the salad sit with the dressing for a few minutes. This will make sure that the pods can properly soak up the dressing and that the bowl’s flavor have some chance to combine.

Sugar Snap Pea Salad with Feta
Ingredients
- 1⅓ cups sugar snap peas
- ¾ cup feta cheese
- 1 small red chili pepper
- ¼ cup peanuts roasted, unsalted
- fresh mint to taste
- 1 organic lemon zested and juiced
- 3 tbsp olive oil
- 1 tsp honey
- salt & pepper to taste
Instructions
- Wash the sugar snap peas and trim the ends.
- Finely chop the chili pepper. Roast the peanuts in a dry skillet until fragrant. Roughly chop the mint.
- In a bowl, whisk together olive oil, lemon juice, lemon zest, honey, salt, and pepper to make a dressing.
- Combine the sugar snap peas, chili, mint, and peanuts with the dressing in a salad bowl. Crumble the feta over the salad and gently toss to combine.
