Our Strawberry Yogurt Cake Is a Dish for All Spring Long

Mildly sweet and punctuated by that bold, red darling fruit, there’s no better match for these gently warm days! Plus, this simple beauty is a good friend to anyone whose managing a busy schedule. Strawberries and yogurt are a wonderful combination in a cake. Both ingredients lend to a particular freshness and moistnes. To make this strawberry yogurt cake recipe, you’ll need a good amount of fresh strawberries. Greek yogurt, cane sugar, eggs, vanilla, spelt flour, butter, baking powder, and powdered sugar should also be on your shopping list.
For our cake, you need a springform pan with a 10 inch diameter. Grease the edges and line the bottom with parchment paper. This will prevent the cake from sticking to the pan while baking.
Now it’s time to make the batter. Start by creaming together the vanilla beans with the butter, salt, and sugar using a mixer. Then, add the eggs and stir in the yogurt. In a separate bowl, mix the flour with the baking powder. Then gradually add the dry ingredients to the batter and mix until smooth. Finally, pour the batter into the pan and top with washed and halved strawberries. Now, all that’s left is the baking! Your strawberry yogurt cake needs to bake for about 35 minutes. This is maybe the hardest step in the process, having enough patience until the first slice is ready to be enjoyed! Don’t worry. It’s worth the wait!

- 1 10-inch springform pan
INGREDIENTS
- 1¾ cups strawberries
- 1 vanilla bean
- 6 tbsp butter
- ¾ cup cane sugar
- 1 pinch of salt
- 3 large eggs
- ¾ cup Greek yogurt
- 2¾ cups spelt flour
- 1½ tsp baking powder
- Powdered sugar, for dusting
INSTRUCTIONS
- Preheat the oven to 350°F. Line the bottom of a springform pan with parchment paper and grease the edges with butter.
- Wash the strawberries, remove the stems, and cut them in half.
- Scrape the seeds from the vanilla bean. In a large bowl, cream the seeds together with the butter, sugar, and salt using a mixer. Add the eggs and stir until creamy. Then, fold in the yogurt.
- Mix the spelt flour with baking powder. Incorporate it into the batter and mix until smooth. Be careful not to overmix!
- Pour the batter into the greased springform pan, smooth it out and spread the strawberries cut-side up on top of the batter.
- Place the cake in the preheated oven and bake for 35 minutes on the middle rack. Let it cool down well and sprinkle with powdered sugar before serving.
