TUNA NOODLE CASSEROLE

  • Prep time: 10 min
  • Cook time: 30 min
  • Total time: 40 min
  • Servings: 4

INGREDIENTS

  • 1 lb ribbon noodles
  • 2 cans tuna (5 oz each), drained
  • 1 ½ cups frozen peas
  • 1 cup heavy cream
  • 2 eggs
  • A pinch of nutmeg
  • Salt, to taste
  • Pepper, to taste
  • ¾ cup grated Monterey Jack cheese

INSTRUCTIONS

  1. Cook the noodles until just shy of al dente – The nudes will continue cooking in the oven, and this will help keep them from getting mushy.
  2. Drain the tuna and roughly flake it with a fork.
  3. Once the noodles are ready, drain them and mix with the tuna and peas. Transfer the mix into a casserole dish.
  4. In a bowl, mix the heavy cream with the eggs and then season with nutmeg, salt, and pepper. Pour the mixture evenly over the noodles.
  5. Grate the Monterey Jack cheese and sprinkle it over the casserole.
  6. Bake the whole thing at 350°F for about 25-30 minutes, or until the crust is golden brown and the casserole bubbling.
