When the day just needs a little extra bit of zhuzh we ditch the cereal bowl and instead treat ourselves to our creamy pistachio overnight oats. Really, these oats have a perfect reminder of how important balance is! Hearty oats mesh with the pistachio’s right and nutty aroma, while raspberries add a citric twist and the crunch of your cornflakes brings it all home. With these overnight oats waiting to wake you up, we promise you won’t be hitting snooze!
Pistachio overnight oats are quick to prepare and require little effort: Prepping it takes all of ten minutes. The real trick is thinking ahead. Afterall, they’re called overnight oats for a reason. It is our humble reccomendation to prepare breakfast in the evening and as the name imples, chill them overnight. This allows for the oat flakes, milk, and flavors to transform into a creamy and aromatic breakfast oatmeal. In the morning, all you have to do is garnish it with fresh (or frozen) raspberries, the rest of your chopped pistachios, and crumbled cornflakes.
The great thing about this pistachio overnight oats recipe is that you can adapt it to your own taste. This already-flavorful oatmeal can even handle more flavor, be it with chopped chocolate or fruit of your choice: Pomegranate, blueberries, or apples can all add depth and twist to your breakfast bowl. Or if you’re looking for some extra fiber, poppy and flax seeds will do just fine.
If you’re vegan, this recipe can be easily adjusted. Simply subsitute the dairy with a plant-based alternative and honey with a maple syrup syrup of your liking.

PISTACHIO OVERNIGHT OATS

INGREDIENTS
- ¾ cup rolled oats
- 1 cup milk
- ¾ cup plain yogurt
- 1 tsp vanilla extract
- ¼ cup chopped pistachios
- Pinch of salt
- 1 tbsp honey
- 100 g raspberries
- 1 tsp crushed cornflakes (optional, for extra crunch)
INSTRUCTIONS
- In a bowl, combine the rolled oats with milk, yogurt, vanilla extract, half of the chopped pistachios and a pinch of salt. Stir in the honey.
- Let the oats chill overnight – or for at least six hours.
- The next morning, divide the oats between two bowls. Top with the remaining pistachios, crushed cornflakes, and garnish with raspberries for an extra twist.
