8 Loaded Ice Cream Rolls

These are tons of delicious ways to serve ice cream, but we fell in love with a new style: the ice cream roll. When you order it from an ice cream parlor, it might look like some strange culinary magic the way it's chopped, rolled up, and  served, but the technique is actually easy enough for you to do at home. And the best part about making ice cream rolls yourself is that you can customize your own flavors and toppings! We opted for 8 delicious flavors, like mint chocolate chip, tropical mango coconut, and even caramel corn, but feel free to get as creative as you want. We'd stop the world and melt with these ice cream rolls!

1. Mint Chocolate Chip Ice Cream

You'll Need:

  • 1¼ cups sweetened condensed milk
  • 1⅓ cups heavy cream
  • 2 tbsp chocolate chips
  • 1 tsp peppermint syrup
  • 2 tsp chocolate syrup
  • fresh mint + chocolate syrup for the topping

Here's How:

1.1 For the mint chocolate chip ice cream, put the condensed milk, heavy cream, chocolate chips, and peppermint syrup into a blender or food processor and blend until combined. Pour the mixture onto a baking sheet and drizzle chocolate syrup in a loose diagonal zig-zag pattern on top. Transfer the baking sheet to the freezer and freeze for at least 4 hours.

1.2 Once the ice cream has chilled, remove it from the freezer, divide it into 3 even sections, and use a metal spatula to roll it up into tight ice cream rolls.

1.3 Transfer the ice cream rolls to a cup and place them upright. Garnish the mint chocolate chip ice cream rolls with chocolate syrup and fresh mint.

2. Tropical Mango & Coconut Ice Cream

You'll Need:

  • 1¼ cups sweetened condensed milk
  • 1⅓ cups heavy cream
  • 1 mango, chopped
  • 5 Raffaello chocolates
  • 1 tbsp shredded coconut
  • whipped cream + chopped mango for the topping

Here's How:

2.1 For the tropical mango & coconut ice cream, put the condensed milk, heavy cream, chopped mango, and Raffaello chocolates into a blender or food processor and blend until combined. Pour the mixture onto a baking sheet and sprinkle the shredded coconut on top. Transfer the baking sheet to the freezer and freeze for at least 4 hours.

2.2 Once the ice cream has chilled, remove it from the freezer, divide it into 3 even sections, and use a metal spatula to roll it up into tight ice cream rolls. Transfer the ice cream rolls to a cup and garnish with whipped cream and chopped mango.

3. Strawberry Oreo Crumble Ice Cream

You'll Need:

  • 1¼ cups sweetened condensed milk
  • 1⅓ cups heavy cream
  • 6 Oreos
  • 4 oz strawberries
  • ⅓ cup sliced strawberries
  • crushed Oreos + strawberry syrup for the topping

Here's How:

3.1 For the strawberry Oreo crumble ice cream, put the condensed milk, heavy cream, Oreos, and 4 oz of strawberries into a blender or food processor and blend until combined. Pour the mixture onto a baking sheet and sprinkle the sliced strawberries on top. Transfer the baking sheet to the freezer and freeze for at least 4 hours.

3.2 Once the ice cream has chilled, remove it from the freezer, divide it into 3 even sections, and use a metal spatula to roll it up into tight ice cream rolls. Transfer the ice cream rolls to a cup and garnish with strawberry syrup and crushed Oreos.

4. Chocolate Banana Nut Ice Cream

You'll Need:

  • 1¼ cups sweetened condensed milk
  • 1⅓ cups heavy cream
  • 1 banana
  • 2 tbsp Nutella
  • 1 tbsp nut topping
  • chocolate syrup + crushed banana chips for the topping

Here's How:

4.1 For the chocolate banana nut ice cream, put the condensed milk, heavy cream, banana, and Nutella into a blender or food processor and blend until combined. Pour the mixture onto a baking sheet and sprinkle the nut topping on top. Transfer the baking sheet to the freezer and freeze for at least 4 hours.

4.2 Once the ice cream has chilled, remove it from the freezer, divide it into 3 even sections, and use a metal spatula to roll it up into tight ice cream rolls. Transfer the ice cream rolls to a cup and garnish with chocolate syrup and crushed banana chips.

5. Caramel Corn Ice Cream

You'll Need:

  • 1¼ cups sweetened condensed milk
  • 1⅓ cups heavy cream
  • ½ cup popped popcorn
  • 3 tbsp caramel syrup
  • 5 soft caramels, crumbled
  • caramel syrup + popcorn for the topping

Here's How:

5.1 For the caramel corn ice cream, put the condensed milk, heavy cream, popped popcorn, and caramel syrup in a blender or food processor and blend until combined. Pour the mixture onto a baking sheet and sprinkle the crumbled soft caramels on top. Transfer the baking sheet to the freezer and freeze for at least 4 hours.

5.2 Once the ice cream has chilled, remove it from the freezer, divide it into 3 even sections, and use a metal spatula to roll it up into tight ice cream rolls. Transfer the ice cream rolls to a cup and garnish with caramel syrup and popcorn.

6. Key Lime Pie Ice Cream

You'll Need:

  • 1¼ cups sweetened condensed milk
  • 1⅓ cups heavy cream
  • ⅓ cup lime juice
  • zest of 1 lime
  • 4 graham crackers
  • whipped cream + crushed graham crackers + 1 slice of lime for the topping

Here's How:

6.1 For the key lime pie ice cream, put the condensed milk, heavy cream, lime juice and lime zest into a blender or food processor and blend until combined. Pour the mixture onto a baking sheet and sprinkle the crushed graham crackers on top. Transfer the baking sheet to the freezer and freeze for at least 4 hours.

6.2 Once the ice cream has chilled, remove it from the freezer, divide it into 3 even sections, and use a metal spatula to roll it up into tight ice cream rolls. Transfer the ice cream rolls to a cup and garnish with whipped cream, crushed graham crackers, and 1 slice of lime.

7. Peanut Butter & Jelly Ice Cream

You'll Need:

  • 1¼ cups sweetened condensed milk
  • 1⅓ cups heavy cream
  • 2 tbsp peanut butter
  • 3 tbsp strawberry jam
  • strawberry syrup + chopped peanuts for the topping

Here's How:

7.1 For the peanut butter & jelly ice cream, put the condensed milk, heavy cream, and peanut butter into a blender or food processor and blend until combined. Pour the mixture onto a baking sheet and spoon the strawberry jam on top. Spread the jam around using the handle of the spoon, transfer the baking sheet to the freezer, and freeze for at least 4 hours.

7.2 Once the ice cream has chilled, remove it from the freezer, divide it into 3 even sections, and use a metal spatula to roll it up into tight ice cream rolls. Transfer the ice cream rolls to a cup and garnish with strawberry syrup and crushed peanuts.

8. Raspberry Rainbow Ice Cream

You'll Need:

  • 1¼ cups sweetened condensed milk
  • 1⅓ cups heavy cream
  • 9 oz raspberries
  • 1 tbsp confetti sprinkles
  • whipped cream + raspberry syrup for the topping

Here's How:

8.1 For the raspberry rainbow ice cream, put the condensed milk, heavy cream, and raspberries into a blender or food processor and blend until combined. Pour the mixture onto a baking sheet and sprinkle the confetti sprinkles on top. Transfer the baking sheet to the freezer and freeze for at least 4 hours.

8.2 Once the ice cream has chilled, remove it from the freezer, divide it into 3 even sections, and use a metal spatula to roll it up into tight ice cream rolls. Transfer the ice cream rolls to a cup and garnish with raspberry syrup and whipped cream.
