1. Lox Croissant

Yield: 8
Prep Time: 10 minutes
Cooking Time: 20 minutes
Difficulty Level: Easy

You'll Need:

  • 1 puff pastry sheet
  • ½ cup cream cheese
  • 3 tbsp whole grain mustard
  • 1 zucchini, diced
  • 4 oz smoked salmon
  • 1 whisked egg for the egg wash
  • black sesame seeds
  • salt & pepper to taste

Here's How:

1.1 Preheat the oven to 375°F and unroll the puff pastry sheet onto a clean work surface. Place a large mixing bowl on top of the puff pastry sheet and use a knife to make a circular cut around the outside of the bowl.

1.2 Remove the excess dough and mixing bowl and divide the circular piece of dough into 8 equal sections.

1.3 Spread about 1 tablespoon of cream cheese and 1 teaspoon of whole grain mustard in the center of each section of dough. Place a few slices of smoked salmon in each section of dough and sprinkle some diced zucchini on top.

1.4 Season with salt & pepper and roll each section of dough up snugly into the shape of a small croissant, making sure to start rolling at the wider end.

1.5 Place the stuffed croissants on a baking tray lined with parchment paper and space them out evenly so that each one has space to expand in the oven. Whisk 1 egg and brush the egg wash evenly over the surface of each croissant.

1.6 Sprinkle black sesame seeds on top, transfer the baking tray to the oven, and bake at 375°F for 20 minutes.

2. Pepperoni Cheese Roses

Yield:
Prep Time: 10 minutes
Cooking Time: 20 minutes
Difficulty Level: Easy

You'll Need:

  • 1 puff pastry sheet
  • tomato puree
  • Italian seasoning
  • 30 slices of pepperoni
  • 12 slices of cheese
  • 1 whisked egg for the egg wash

Here's How:

2.1 Preheat the oven to 375°F. Unroll the puff pastry sheet onto a clean work surface and cut it horizontally into 6 rectangular strips, each about 2 inches wide.

2.2 Spread a thin layer of tomato puree over each rectangular strip of dough, leaving about ¾ of an inch uncovered on the right-hand side. Sprinkle Italian seasoning on top of the tomato puree.

2.3 Use a round cookie cutter or knife to cut the slices of cheese into circles the same size as the pepperoni. Starting from the left-hand side of each rectangular strip, place 1 slice of pepperoni, 2 slices of cheese, and 4 more slices of pepperoni on the upper half of the strips of dough. The slices of pepperoni and cheese should peek out over the top of the dough, and there should be some dough that's left uncovered at the bottom.

2.4 Fold the uncovered part of the dough upwards to seal in the pepperoni and cheese and gently press the dough in place.

2.5 Starting from the left-hand side, roll up the each strip of dough to form the shape of a rose. Transfer each rolled-up segment of dough to a muffin pan.

2.6 Whisk 1 egg and brush the egg wash over each puff pastry rose. Transfer the muffin pan to the oven and bake at 375°F for 20 minutes.

3. Italian Sausage Twists

Yield: 5
Prep Time: 10 minutes
Cooking Time: 20 minutes
Difficulty Level: Easy

You'll Need:

  • 1 puff pastry sheet
  • 2 Italian sausages
  • cup shredded mozzarella
  • baby spinach
  • pepper
  • 1 egg yolk + 1 egg for the egg wash

Here's How:

3.1 Preheat the oven to 375°F, unroll the puff pastry sheet onto a clean work surface, and whisk 1 egg yolk. Brush the egg wash vertically down the left-hand side of the puff pastry sheet so that it covers a section about ¾ of an inch thick. Slice open the 2 Italian sausages and squeeze the meat out directly onto the puff pastry sheet.

3.2 Use a fork to spread the sausage evenly over the leftmost half of the puff pastry sheet, leaving the egg wash strip and another ¾ of an inch section before the center of the puff pastry uncovered.

3.3 Sprinkle with shredded mozzarella, top with fresh baby spinach, and season with pepper.

3.4 Fold the right-hand side of the puff pastry over to meet the opposite end and press the edges of the dough together to seal them. Cut the stuffed puff pastry into 5 even strips, each 1½ inches thick.

3.5 Twist each stuffed strip to make a spiral shape and place each twist on a baking tray lined with parchment paper.

3.6 Whisk 1 egg and brush the egg wash evenly over the surface of each Italian sausage twist. Transfer the baking tray to the oven and bake at 375°F for 20 minutes.

4. Chocolate Banana Danish

Yield: 1
Prep Time: 10 minutes
Cooking Time: 20 minutes
Difficulty Level: Easy

You'll Need:

  • 1 puff pastry sheet
  • 1 milk chocolate bar
  • 1 banana, sliced
  • 2 tbsp sliced almonds
  • 1 whisked egg for the egg wash
  • 1 tbsp sugar

Here's How:

4.1 Unroll the puff pastry sheet on a clean work surface and preheat the oven to 375°F. Place the milk chocolate bar in the center of the puff pastry sheet and make evenly-spaced diagonal cuts about ½ inch apart from one another down both sides of the puff pastry dough.

4.2 Slice the banana and place the slices on top of the chocolate bar. Sprinkle sliced almonds evenly over the top of the banana.

4.3 Fold the strips of dough on the sides of the puff pastry sheet towards the center, folding them over one another and covering the chocolate, banana, and almond filling.

4.4 Transfer the danish to a baking tray lined with parchment paper and pinch both the top and bottom to seal it and to make sure the chocolate doesn't leak out while it's baking. Whisk 1 egg, brush the egg wash over the surface of the danish, and sprinkle sugar on top.

4.5 Transfer the baking tray to the oven and bake at 375°F for 20 minutes.
