4 Eggciting New Egg Recipes

Our love for eggs knows no bounds. Eggs are the perfect base for hundreds of culinary classics, but we won't bore you with the classics today – you've seen those before. We're all about innovation here and we constantly strive to come up with exciting new ways to eat eggs. Case in point: these 4 eggciting egg recipes! Whether you're in the mood for some egg salad, a cheesy omelet, a frittata, or even sushi – egg it up with these recipes!

1. Easy Egg Salad

You'll Need:

  • 3 hard-boiled eggs
  • 3 tbsp mayonnaise
  • 2 slices cooked bacon, diced
  • salt & pepper to taste
  • chives

Here's How:

1.1 Peel the boiled eggs and add them to a freezer bag along with the mayonnaise, bacon, salt, and pepper. Use your hands to press down on the bag and knead the ingredients until they are well combined.

1.2 Squeeze the egg salad to one corner of the freezer bag and cut off the corner.

1.3 Spread the egg salad on the toast and garnish with chives.

2. Cheesy Egg White Omelet

You'll Need (for 2):

  • 6 eggs, separated 
  • 1 tbsp parsley
  • salt & pepper to taste
  • 4 cheese strips

Here's How:

2.1 Separate the eggs, add the parsley to the egg whites, and season the egg yolks with salt and pepper.

2.2 Heat a square pan over medium heat and lightly grease it. Pour the egg yolks into the pan, wait for them to set, and put 2 cheese strips on one end.

2.3 Wrap the cheese in the omelet, leaving one edge open. Slide the omelet roll to the edge of the pan and pour the egg whites over the end of the roll, making sure there's enough egg white on the edge of the omelet so that they overlap.

2.4 Once the egg whites have set, roll up the omelet once more and serve right away.

3. Fried Rice Frittata

You'll Need:

  • 6 egg yolks
  • 12 egg whites
  • 1 cup cooked rice
  • salt & pepper to taste
  • 3 slices cheese
  • fresh parsley

Here's How:

3.1 Mix the egg yolks with the cooked rice and season the mixture with salt and pepper.

3.2 Pour half of the egg whites into a preheated, lightly greased cast iron skillet and wait until they're almost completely set. Then pour half of the egg yolk rice mixture on top.

3.3 Place the cheese slices on top.

3.4 Cover the cheese with the remaining egg yolk rice mixture before adding the rest of the egg whites.

3.5 Cook the rice frittata for 45 minutes in a preheated oven set to 275°F. Garnish with parsley before serving.

4. Sushi Bacon Egg Roll

You'll Need:

  • 4 eggs
  • 3 oz ham, cubed
  • 3 tbsp scallions
  • ½ cup diced carrots
  • 1 tbsp diced red chili pepper
  • salt & pepper to taste
  • 9 slices bacon
  • 1 cup cooked & seasoned sushi rice
  • sushi mat

Here's How:

4.1 Whisk the eggs, mix in the ham, scallions, carrot, and chili pepper, and season everything with salt and pepper. Lightly grease a skillet and heat it over medium heat before pouring in a thin layer of the egg mixture. Then wait for the egg to set.

4.2 Roll up the omelet, slide it to one side of the pan, and pour in more of the egg mixture, making sure the edge of the omelet overlaps with the liquid mixture to make them stick together. If there is any egg mixture left, repeat this process until it's gone.

4.3 Line the sushi mat with bacon in a series of overlapping slices before spreading the cooked and seasoned sushi rice on top, leaving one slice of bacon uncovered.

4.4 Place the egg roll in the center of the rice and use the sushi mat to roll everything up.

4.5 Fry the bacon-wrapped sushi egg roll until crispy.
