  • 1 puff pastry sheet
  • 1 cup grated cheddar cheese
  • ½ tsp cayenne pepper
  • 5 strips of bacon
  • 2 tbsp brown sugar + ½ tsp chopped rosemary

1.1 Preheat the oven to 375°F. Unroll 1 puff pastry sheet onto your work surface, grate the cheddar cheese over ½ of the puff pastry dough, and sprinkle cayenne pepper over the cheese.

1.2 Fold the remainder of the puff pastry dough over the half covered in cheddar and lightly press down to seal the edges. 2.1 Preheat the oven to 375°F. Unroll 1 puff pastry sheet onto your work surface and spread cream cheese over most of  the surface of the dough, leaving the upper edge uncovered. Sprinkle the diced red onion, chopped parsley, and diced bacon over the cream cheese, then grate the cheddar cheese directly on top. Roll the puff pastry sheet up lengthwise, forming it into a snug log.

2.2 Cut the roll into ¾-inch thick slices and transfer them to a baking tray lined with parchment paper, leaving enough space between each cheesy bacon bun to rise in the oven. Whisk an egg for the egg wash and brush it evenly over each bun.

4.1 Preheat the oven to 350°F. Cover a plate with parchment paper, place 2 strips of bacon horizontally on the plate in the middle section, then place 1 strip of bacon on top vertically to the leftmost side of the horizontal pieces. Place 3 more slices of bacon horizontally over the vertical piece at the top, middle, and bottom of the vertical strip of bacon, making sure they don't overlap with the first two pieces. Flip the first 2 horizontal strips to the left and place another vertical strip next to the first one. Continue to alternate flipping the horizontal strips of bacon, adding a new vertical piece each time. Weave the bacon using this technique until you form a complete square of bacon.
