Stuffed Peppers 3 Ways: Pizza Peppers, Doughy Cheesy Peppers & Meatloaf Pepper Rings

Whether you prefer red, green, or yellow, there's no denying that a fresh pepper is hard to beat. And they're so versatile too: raw, fried, baked, steamed – they're all great! We especially love stuffed peppers, and if you were thinking there's only one way to stuff a pepper, you'd be wrong. In fact, we've come up with three mouthwatering recipes for stuffed peppers, so let's get started!

1. Pizza Peppers

You'll Need:

  • 6 peppers (2 red, 2 yellow, and 2 green – or whatever combination you prefer)
  • 3 oz tomato sauce
  • 3 oz shredded cheese (mix of cheddar and mozzarella)
  • small broccoli florets
  • 2 tbsp diced bacon
  • cherry tomatoes, sliced
  • basil or parsley to garnish

Here's How:

1.1 Preheat the oven to 350°F. Cut the peppers in half lengthwise and remove the cores.

1.2 Place the pepper halves on a sheet pan lined with parchment paper and fill them with tomato sauce.

1.3 Sprinkle shredded cheese, small broccoli florets, and chopped bacon over the tomato sauce and top with a few cherry tomato slices. Bake for 15 minutes.

2. Doughy Cheese Stuffed Peppers

You'll Need:

For the pizza dough:

  • 8 oz flour
  • 4 fl oz milk
  • 1 tbsp oil
  • 4 tsp fresh yeast
  • ½ tsp salt

For the filling:

  • 1 mozzarella ball
  • 2 tbsp diced bacon
  • 1 tbsp chopped rosemary
  • 6 oz ricotta 

Extra:

  • 2 sweet pointed peppers

Here's How:

2.1 Preheat the oven to 400°F and prepare the dough. Dissolve the yeast in some milk and heat the remaining milk over medium heat. Mix the salt and oil and add the dissolved yeast and remaining milk. Stir everything until a dough ball forms. Cover the dough with a cloth and leave it in a warm place for 30-45 minutes.

Wash the peppers, cut off the stems, and remove the seeds. Combine the grated mozzarella, bacon, rosemary, and ricotta together and spoon the mixture into the peppers.

2.3 Once the dough has risen, knead it once more and shape it into a roll. Divide it into 2 equal pieces and flatten it out. Wrap a strip of dough around each pepper and place the wrapped peppers on a pan lined with parchment paper. Bake for 25 minutes, or until golden brown.

3. Meatloaf Pepper Rings

You'll Need:

  • 3 bell peppers
  • 14 oz ground beef
  • 4 tbsp parmesan
  • 1 tsp cayenne pepper
  • 1 garlic clove
  • salt & pepper
  • 1 tsp paprika
  • 1 tbsp chopped parsley
  • 3 oz tomato sauce
  • 3 oz shredded cheese
  • 1 tbsp bread crumbs

Here's How:

3.1 Preheat the oven to 300°F. Cut off the top and bottom sections of the peppers and dice them. Remove the core from the center sections, which will be your pepper rings.

3.2 Mix the ground beef, garlic, parmesan, bread crumbs, and small diced peppers together in a bowl and season with salt, pepper, cayenne pepper, and paprika.

3.3 Place the pepper rings in a greased pan or skillet over medium heat and spoon the meat mixture into the rings. Fry the rings on both sides until the meat is cooked through.

3.4 Top each pepper ring with a dollop of tomato sauce and some cheese, transfer the pan to the oven, and bake for 30 minutes. Garnish the finished peppers with chopped parsley.
