3 Sheet Pan Breakfast Recipes

Breakfast is oftentimes said to be the most important meal of the day, but we think it should also be the yummiest! There's nothing quite like waking up and making a huge breakfast with eggs, hash browns, and maybe even some pancakes! But a big delicious breakfast takes so long to prepare – there are lots of different elements, plus you're usually cooking before the coffee has kicked in. Instead of coordinating tons of different things for your meal, give these 3 sheet pan breakfast ideas a try! From traditional to Tex-Mex to sugary sweet, these 3 recipes for sheet pan breakfasts will up your breakfast game and save you time and energy.

1. Tex-Mex Breakfast Quesadillas

You'll Need:

  • 7 tortillas
  • 1 potato, boiled & cubed
  • 14 oz ground beef, fried & seasoned
  • 1 red onion, sliced
  • 8 eggs
  • 3 tbsp milk
  • 3 sprigs of cilantro, chopped
  • salt & pepper to taste
  • 1 cup shredded mozzarella
  • sour cream + salsa for the garnish

Here's How:

1.1 Preheat the oven to 350°F and grease the sheet pan. Line the sheet pan with 6 tortillas so that they cover the entire surface of the pan and overlap one another slightly. Place the cubed potato, fried ground beef, and sliced red onion on top of the tortillas.

1.2 Whisk the eggs, milk, and cilantro together, and once combined, pour the egg mixture over the ingredients in the sheet pan.

1.3 Season the breakfast quesadilla with salt & pepper and sprinkle shredded mozzarella on top. Fold the sections of tortilla that fall outside of the sheet pan towards the center and place the final tortilla on top. For the best results, place some weight on top of the tortillas so that they don't bubble up in the oven. Transfer the sheet pan to the oven and bake at 350°F for 25 minutes. 

2. Ham, Egg & Hash Brown Breakfast

Cooking Time: 50 minutes

You'll Need:

  • 1 lb potatoes, grated
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 1 tbsp chopped thyme
  • salt & pepper to taste
  • 3 tbsp vegetable oil
  • 11 oz ham, cooked & cubed
  • 2 cups shredded cheddar
  • 6 eggs
  • chopped scallions for the garnish

Here's How:

2.1 Preheat the oven to 350°F and grease the sheet pan. Grate the potatoes directly onto the sheet pan, add in the sliced onions and minced garlic, and season with chopped thyme, salt & pepper. Pour the vegetable oil over the ingredients, mix everything together, and spread the potato mixture evenly over the sheet pan.

2.2 Transfer the sheet pan to the oven and bake at 350°F for 40 minutes. As the hash browns bake, take them out of the oven and stir them sporadically so that they cook evenly. Once the hash browns have baked, remove the sheet pan from the oven and sprinkle the cubed ham and shredded cheddar cheese on top. Press the bottom of a clean glass into the hash browns to make 6 evenly spaced wells and crack 1 egg into each well. Transfer the sheet pan back to the oven and bake for another 10 minutes. Remove the ham, egg & hash brown breakfast from the oven and garnish with chopped scallions.

3. Sheet Pan Pancakes

You'll Need:

  • 4 cups flour
  • 4 eggs
  • ¼ cup sugar
  • 2 cups milk
  • 2 tsp baking powder
  • 8 strawberries, halved
  • 1 cup blueberries
  • 7 Oreos, crushed
  • 2 tbsp semi-sweet chocolate chips
  • honey or maple syrup for the topping

Here's How:

3.1 Preheat the oven to 350°F and line the sheet pan with parchment paper. Combine the eggs, milk, sugar, baking powder, and flour and stir until a smooth batter forms, then pour the pancake batter into the sheet pan.

3.2 Top off the pancake batter with separate sections of chopped strawberries, chocolate chips, blueberries, and crushed Oreos. Transfer the sheet pan to the oven, and bake at 350°F for 25 minutes.

3.3 Take the sheet pan pancakes out of the oven, cut them into small rectangles, and serve with maple syrup or honey.
