3 Radiant Rainbow Desserts

Seeing a rainbow light up the sky is one of the most amazing feelings in the world. You might even say that it's just like magic! Rainbows can put a smile on just about anyone's face, thanks to their bright colors and natural radiance. Even though rainbows are a rare sight, we've found a way to bring them right into your home with these 3 radiant rainbow desserts. Our colorful fudge, bright cake roll, and rainbow ice cream will all add some serious color to your life. Forget about the pot of gold at the end, these rainbow sweets are even better!

1. Rainbow Skittles Ice Cream

Prep Time: 40 minutes
Cooking Time: 25 minutes
Inactive Time: 5–6 hours
Difficulty Level: Easy

You'll Need:

  • ⅓ cup yellow, orange, red, green & purple Skittles
  • cup water per Skittles flavor
  • 1 tbsp yellow, orange, red, green & purple powdered drink mix
  • 3 tbsp whipped cream per Skittles flavor
  • ⅓ cup sweetened condensed milk per Skittles flavor
  • confetti sprinkles for the topping
  • ice cream cones (optional)

Here's How:

1.1 Heat  cup of water and dissolve 1 of the Skittles flavors in it, stirring continuously. Repeat this step for the remaining Skittles flavors, then let everything cool down.

1.2 Stir 1 tablespoon of each flavor of powdered drink mix into the corresponding Skittles water. Fold 3 tbsp of whipped cream into each colorful mixture, then stir in the sweetened condensed milk.

1.3 Pour the colored mixtures into a large baking dish, making a colorful pattern. Cover the baking dish with parchment paper, transfer it to the freezer, and freeze the rainbow Skittles ice cream for at least 6 hours, preferably overnight.

1.4 Scoop your homemade rainbow Skittles ice cream into bowls or ice cream cones, then add some confetti sprinkles on top!

2. Rainbow Sponge Cake Roll

Prep Time: 75 minutes
Cooking Time: 15 minutes
Inactive Time: 90 minutes
Difficulty Level: Moderate

You'll Need:

For the rainbow sponge cake:

  • 6 egg whites
  • 1 cup sugar
  • ½ cup vegetable oil
  • ½ cup milk
  • 2 cups flour
  • purple, blue, green, yellow, orange & red food coloring
  • powdered sugar

For the buttercream frosting:

  • 1½ sticks butter, softened
  • ⅓ cup sweetened condensed milk
  • confetti sprinkles

Here's How:

2.1 Preheat the oven to 325°F and line a baking tray with parchment paper. For the rainbow sponge cake, beat the egg whites together with the sugar. Slowly add in the vegetable oil and beat until combined, then stir in the milk and flour. Divide the batter evenly between 6 mixing bowls, then color each portion of batter with a different color of food coloring. Transfer each colored batter to a separate resealable plastic bag.

2.2 Cut 1 corner off of each resealable plastic bag and pipe stripes of the colored batters onto the parchment paper on the baking tray, making a rainbow pattern. Transfer the baking tray to the oven and bake the rainbow sponge cake at 325°F for 15 minutes.

2.3 Spread a clean kitchen towel out on your work surface and sprinkle some powdered sugar on it to keep the cake from sticking. Carefully loosen the sponge cake from the baking tray around the edges, then carefully flip it over onto the kitchen towel. Peel off the parchment paper, then use the kitchen towel to loosely roll up the hot sponge cake. Let the rolled-up rainbow sponge cake cool for about 30 minutes. For the buttercream frosting, beat the softened butter until it becomes creamy, stir in the sweetened condensed milk, and fold in the confetti sprinkles.

2.4 Roll out the cooled sponge cake and frost it with the buttercream frosting, leaving the edge of 1 side uncovered.

2.6 Roll up the sponge cake with the buttercream frosting, making sure to roll up the uncovered section last. Transfer the rainbow cake roll to the refrigerator and chill for at least 1 hour.

3. Rainbow Fudge

Prep Time: 75 minutes
Cooking Time: 10 minutes
Inactive Time: 3 hours
Difficulty Level: Easy

You'll Need:

  • 2 lbs white chocolate, chopped
  • 2⅔ cups sweetened condensed milk
  • purple, blue, green, yellow, orange & red food coloring
  • sprinkles for the topping

Here's How:

3.1 Heat the chopped white chocolate and sweetened condensed milk until the mixture becomes a smooth and creamy.

3.2 Divide the mixture evenly between 6 mixing bowls and color each of them a different color with the food coloring. Transfer each portion of colored fudge into a resealable plastic bag and cut off 1 of the corners of each bag.

3.3 Line the a 7 x 7-inch cake pan with parchment paper. Pipe the colorful fudge mixtures into the cake pan 1 at a time, starting with purple and ending with red in order to make a rainbow of colorful fudge layers. We recommend piping each mixture into the cake pan in a spiral pattern and smoothing it out with a flat spatula before adding the next color. This will ensure that each layer will be equally thick and that the colors won't mix.

3.4 Cover the top layer with a piece of parchment paper and press down on it with a cutting board. Remove the parchment paper and sprinkle colorful sprinkles on top. Transfer the cake pan to the refrigerator and chill for at least 3 hours.

3.5 After the rainbow fudge has cooled, remove the fudge from the cake pan using the parchment paper, grease a knife, and cut your bright fudge into individual servings.
