Liven Up Breakfast With An Omelet Roll Done 3 Ways

As the saying goes: if you want to make an omelet, you've got to crack a few eggs. But in this case, you won't be making just an omelet, but rather three of them. And while the omelet itself may stay the same, the different fillings you'll be using to stuff these tasty omelet rolls couldn't be more different.

You'll need (per omelet):

  • 6 eggs
  • 1 oz grated parmesan
  • 1 tsp parsley, chopped
  • salt & pepper

For the ham & cheese omelet roll:

  • 1 tbsp butter
  • 4 onions, sliced
  • salt & pepper
  • 5½ oz ham slices
  • 5½ oz mozzarella slices

For the spinach & feta omelet roll:

  • 10½ oz spinach
  • nutmeg
  • salt & pepper
  • 5½ oz feta
  • 2 oz almonds, sliced

For the arugula & salmon omelet roll:

  • 7 oz cream cheese
  • 10½ oz smoked salmon
  • 3½ oz arugula

Here's how:

1. For each of the three recipes, you'll need to make the omelet first. To prepare this, mix the eggs, parmesan, parsley, and some salt and pepper together in a bowl.

2. Crumple up a piece of parchment paper, dip it in water, wring it out, and then smooth it out on a sheet pan.

3. Pour the egg mixture into the pan and bake at 355°F for 10-15 minutes.

4. Spread plastic wrap over the pan and flip it upside down onto the table. Let the omelet cool down a bit.

5. Depending on which omelet recipe you want, spread the appropriate ingredients over the omelet and roll it up afterwards. Let it sit for a few minutes before you remove the plastic and put it in the oven so that it has time for its shape to take hold.

a) For the ham and mozzarella cheese omelette, first fry the onions in the butter. Spread the caramelized onions over the omelet roll, followed by the ham slices, and finally the cheese slices. Roll up the omelet, remove the plastic wrap, and bake for 10 minutes at 355°F. 

b) For the spinach and feta omelet, spread the spinach over the bottom, sprinkle grated nutmeg over it, season with a little salt and pepper, and then spread the feta cheese and then the almonds.

c) For the arugula and smoked salmon omelet, spread cream cheese over the bottom, then lay the salmon on top, and finally top off with arugula.
