3 Dazzling No-Bake Jello Cakes

If you're like most people who love spending time in the kitchen, the summer heat puts a hold on a lot of cooking and baking plans. Nobody likes to be stuck inside with a hot stove or oven, but having a sweet treat after dinner or celebrating the summer months with some delicious desserts is still important! Luckily, we've come up with 3 stunning no-bake jello cake recipes, perfect for any palette: a refreshing fresh fruit & vanilla pudding cake, creamy cookies & cream jello cake, and a marshmallow berry cake. After you pop these cakes in the fridge, all you have to do is sit back, relax, and make room for dessert!

1. Fresh Fruit & Vanilla Pudding Cake

You'll Need:

For the vanilla jello pudding:

  • 4 cups milk
  • 2 cups heavy cream
  • 2 tbsp vanilla extract
  • 1¼ cups sugar
  • ¾ cup unflavored gelatin powder + ¾ cup hot water

For the fruit jello:

  • 2 cups water
  • 3 tbsp lemon juice
  • 1 cup sugar
  • 1 tbsp vanilla extract
  • ¼ cup unflavored gelatin powder + ⅓ cup hot water
  • 2 cups green grapes
  • 1 mango, chopped
  • 2 cups chopped strawberries
  • ½ pineapple, chopped

  • 9-inch bundt cake pan 

Here's How:

1.1 For the vanilla jello pudding, heat the milk, heavy cream, vanilla extract, and sugar in a large saucepan to 175°F. Dissolve the unflavored gelatin powder in ¾ cup hot water and stir it into the vanilla mixture until combined. Rinse the 9-inch bundt cake pan with cold water, pour in the vanilla jello pudding mixture, transfer the bundt cake pan to the refrigerator, and chill for at least 2 hours.

1.2 For the transparent jello, heat the water, lemon juice, sugar, and vanilla extract in a large saucepan to 175°F. Dissolve the unflavored gelatin powder in ⅓ cup hot water and add it to the lemon mixture. Once combined, remove the transparent jello mixture from the heat and let it cool. Remove the set vanilla jello pudding from the refrigerator, divide it into 8 equal sections, and remove every other slice from the bundt cake pan.

1.3 Place the chopped pineapple, chopped mango, chopped strawberries, and green grapes in the gaps left in the bundt cake pan.

1.4 Pour the transparent jello mixture over the fruit, transfer the bundt cake pan to the refrigerator, and chill for another 2 hours, preferably overnight.

1.5 Once the cake has set, remove it from the refrigerator and flip it over onto a serving platter. Fill the center with fresh fruit and dig in!

2. Cookies & Cream Jello Cake

You'll Need:

For the jello puddings:

  • 8⅓ cups milk
  • 4 cups heavy cream
  • 2 cups sugar
  • ¼ cup vanilla extract
  • 1½ cups unflavored gelatin powder + 1¼ cups hot water
  • ½ cup semi-sweet chocolate chips
  • 1¾ cups cocoa powder
  • 11 oz Oreo cookies

Extra:

  • 9-inch bundt cake pan
  • whipped cream + Oreos for the garnish

Here's How:

2.1 For the 2 jello puddings, heat the milk, heavy cream, sugar, and vanilla extract in a large saucepan to 175°F. Dissolve the unflavored gelatin powder in 1¼ cups hot water and stir it into the pudding mixture. Once combined, remove the jello pudding from the heat, transfer 2 cups to a large mixing bowl, and set the remainder of the jello pudding aside for later. Stir the semi-sweet chocolate chips and cocoa powder into the 2 cups of hot jello pudding. Once the chocolate has melted and the ingredients are combined, pour the chocolate jello pudding mixture into a 9-inch bundt cake pan, transfer the pan to the refrigerator, and chill for at least 2 hours.

2.2 Once the chocolate pudding layer has set, remove it from the refrigerator. Cut the Oreo cookies in half and place them on top of the chocolate jello pudding layer.

2.3 Pour the remainder of the vanilla jello pudding into the bundt cake pan so that the Oreos are suspended in it, transfer the pan to the refrigerator, and chill for at least 3 hours, preferably overnight.

2.4 Once the cookies & cream jello cake has set, remove it from the refrigerator and flip it over onto a serving platter. Garnish the top of the cake with whipped cream and Oreo cookies.

3. Berry Marshmallow Jello Cake

You'll Need:

For the strawberry jello pudding:

  • 1 lb fresh strawberries
  • 4 cups heavy cream
  • 1¼ cups sugar
  • 2 tbsp vanilla extract
  • ½ cup unflavored gelatin powder
  • 7 oz heart-shaped marshmallows

For the berry blue jello:

  • 2 packages berry blue jello (approx. 12 oz)

Extra:

  • whipped cream + red food coloring
  • sprinkles
  • 9-inch bundt cake pan

Here's How:

3.1 For the strawberry jello pudding, heat the heavy cream to 125°F in a small saucepan. Once warm, pour the heavy cream, strawberries, sugar, and vanilla extract into a blender and blend until smooth and creamy. Dissolve the unflavored gelatin powder in water and stir it into the creamy strawberry mixture. Rinse a 9-inch bundt cake pan with cold water and pour in ½ of the strawberry jello pudding.

3.2 Place the heart-shaped marshmallows in a ring around the entire cake pan, then pour the remaining strawberry jello pudding over them so that the marshmallows are suspended in the strawberry jello pudding. Transfer the bundt cake pan to the refrigerator and chill for at least 2 hours.

3.3 Once the strawberry jello pudding has set, take the bundt cake pan out of the refrigerator. Make the berry blue jello according to the instructions on the package. Carefully separate the sides of the strawberry jello pudding from the bundt cake pan using a rubber spatula. Pour the berry blue jello mixture into the bundt cake pan, making sure that the berry blue jello seeps down into all sections of the pan and the strawberry jello pudding layer starts to float. Transfer the bundt cake pan to the refrigerator and chill for at least 3 hours, preferably overnight.

3.4 Once the cake has set, fold red food coloring into some whipped cream to make pink whipped cream, transfer the pink whipped cream to a piping bag, and pipe it onto the top of the cake. Sprinkle colorful sprinkles on top and add some additional heart-shaped marshmallows to the sides of the cake to serve.
