1. Sweet Potato Fry Churros

Ingredients:

  • ¾ cup milk
  • 14 oz frozen sweet potato fries, thawed
  • ½ stick butter
  • 1 egg
  • ¾ cup flour
  • sugar to garnish
  • chocolate dipping sauce to serve

Instructions:

Heat the milk in a saucepan over medium heat. Add the thawed sweet potato fries and butter to the saucepan and cook for 10 minutes while constantly stirring. Mash the mixture until smooth, fold in the flour, and continue to heat the mixture while continuously stirring it until all the moisture has evaporated. Fold in the egg and spoon the sweet potato mixture into a piping bag. Heat some cooking oil in a pan over medium heat, and working in batches, pipe long strips of the sweet potato mixture into the hot oil and fry until golden brown. Roll the hot sweet potato fry churros in sugar and serve with chocolate dipping sauce.

2. Stuffed Sweet Potato Fry Balls

Ingredients:

  • 14 oz frozen sweet potato fries, thawed
  • 1 cup flour
  • ½ tsp baking powder
  • 1 egg
  • 16 banana slices
  • 16 pieces of chocolate
  • powdered sugar to garnish

Instructions:

Combine the thawed sweet potato fries, flour, baking powder, and egg, knead the mixture into a smooth dough, and refrigerate for 30 minutes. Flatten a small piece of the sweet potato dough in the palm of your hands, place a banana slice on top, and push a piece of chocolate into the banana. Shape the sweet potato dough around the stuffed banana and roll it into a ball. Repeat with the rest of the sweet potato dough, banana slices, and chocolate pieces until you have 16 balls. Heat some cooking oil in a pot and fry the stuffed sweet potato fry balls until golden brown. Garnish with powdered sugar before serving.

3. Sweet Potato Fry Pancakes

  • 14 oz frozen sweet potato fries, thawed
  • ⅓ cup walnuts
  • 1 apple, grated
  • ⅓ cup corn starch
  • cinnamon sugar to garnish
  • vanilla sauce to serve

Instructions:

Combine the thawed sweet potato fries and walnuts, mash until smooth, and then fold in the corn starch and grated apple. Form 10 flat circles from the sweet potato mixture and coat each one in cinnamon sugar. Heat some cooking oil in a pan, fry the sweet potato fry pancakes on both sides until golden brown, and serve with vanilla sauce.
