3 Crazy Delicious Summer Popsicles

What's the perfect dessert for any occasion and the ideal sweet treat on any given day? That's right, popsicles! But if you're sick and tired of the standard fare from the ice cream truck and frozen food aisle at your local grocery store, then you're going to want to listen up. We're going to show you 3 unconventional popsicle recipes that might seem random at first, but it's all going to make sense in the end – trust and believe!

1. Flavored Milk Popsicles

You'll Need (for 3):

  • small chocolate milk box
  • small strawberry milk box
  • small vanilla milk box
  • 3 popsicle sticks
  • white chocolate, melted
  • semi-sweet chocolate, melted
  • pink Candy Melts
  • pistachios, chopped
  • hazelnuts, chopped
  • coconut flakes

Here's How:

Instead of the straws that are attached to the flavored milk boxes, insert popsicle sticks into the cartons and freeze them for 3-4 hours. Then cut into the cartons near the popsicle sticks and remove the packaging. Melt the white and semi-sweet chocolate as well as the Candy Melts, and decorate the flavored milk bars with the toppings while the chocolate is still melted.

2. Strawberry Yogurt Popsicles 

You'll Need (for 3):

  • 3 empty yogurt cups
  • 12 oz strawberry yogurt
  • 1 cup whipped cream
  • strawberry jam
  • graham cracker crumbs
  • 3 popsicle sticks
  • strawberry syrup

Here's How:

2.1 Make a small insertion with the tip of a knife in the center of each yogurt cup and peel the lid to the side without removing it completely. (The incision will help hold the popsicle stick in place.)

2.2 Add the strawberry yogurt to a bowl and fold in the whipped cream. Fill each empty yogurt cup with a spoonful of the strawberry whipped cream yogurt mixture and a spoonful of strawberry jam, followed by another spoonful of the strawberry whipped cream yogurt. Then sprinkle crumbled graham crackers on top.

2.3 Close the lid on the cups and insert a popsicle stick into the cut you made earlier. Freeze the strawberry yogurt popsicles for 2-3 hours. Afterwards, remove the containers and drizzle strawberry syrup over the popsicles before serving.

3. Brownie Popsicles

You'll Need (for 6):

  • 6 oz semi-sweet chocolate, melted
  • 1¼ sticks butter
  • ¾ cup sugar
  • 3 eggs
  • 1 cup flour
  • ⅓ cup cocoa powder
  • 6 popsicle sticks
  • small tupperware lid

For the decoration:

  • 5 oz semi-sweet chocolate, melted
  • 10 oz blue Candy Melts
  • 10 oz green Candy Melts
  • 10 oz orange Candy Melts
  • sprinkles

Here's How:

Tip: If you don't have Candy Melts on hand, you can also dye white chocolate with food coloring. Fat-soluble food coloring works best for this purpose.

3.1 Preheat the oven to 350°F and melt the semi-sweet chocolate with the butter. Whisk the eggs with the sugar until frothy, and fold in the melted chocolate and butter mixture. Once all the ingredients are well combined, sieve in the flour and cocoa powder and stir them in quickly. Line a baking tray with parchment paper and add the brownie batter to it. Bake the brownies for about 25 minutes, then let cool completely. Use a tupperware lid to cut out 6 equal pieces that ideally look similar to a Magnum ice cream bar.

3.2 Melt the rest of the semi-sweet chocolate and dip the popsicle sticks in it. Then insert the popsicle sticks into the brownies.

3.3 Melt the Candy Melts and pour them into flat containers while they're still liquid. Coat 2 brownies each in one of the colors and wait for the coating to set. The best way to do this is by putting the brownie bars in an upright position, e.g. styrofoam or a cake pop stand. Transfer the rest of the melted chocolate to a piping bag and pipe it on the brownies popsicles. Then add rainbow sprinkles to the chocolate for a colorful finishing touch.
