3 Corn On The Stick Sandwich Recipes

You've probably been eating corn on the cob your entire life, and not once did you stop and think about how it could be improved. To be honest, neither did we... because seriously, how can sweet, buttery corn get any better?! We have 3 delicious answers to that, but the gist of it is: stuffed—corn—sandwich—on a stick— yep, we went there, and we bet you're going to want to too.

1. Bacon & Cheese Corn On The Stick

You'll Need (for 2):

  • 1 cooked corncob
  • 2 thick slices of cheese
  • 4 strips of bacon
  • 2 tbsp melted butter
  • salt & pepper to taste
  • 2 popsicle sticks

Here's How:

1.1 Cut the corn kernels off in one clean sweep by slicing down the corncob vertically. Repeat this on the other 3 sides and season the corn with salt and pepper.

1.2 Place one of the corn pieces on 2 strips of bacon. 

1.3 Push a popsicle stick into the thick slice of cheese and place it on top of the corn.

1.4 Place the second piece of corn on top of the cheese and wrap the bacon around the sandwich.

1.5 Brush the corn sandwiches with melted butter, place in the electric grill, and cook for 8 minutes, leaving the lid slightly open.

2. BBQ Burger Corn On The Stick

You'll Need (for 2):

  • 1 cooked corncob
  • 5 oz ground beef
  • 1 tbsp diced onion
  • 1 garlic clove, minced
  • 1 tbsp chopped parsley
  • 2 tbsp BBQ sauce
  • 1 egg yolk
  • salt & pepper to taste
  • 2 tbsp melted butter
  • 2 popsicle sticks

Here's How:

2.1 Cut the corn kernels off in one clean sweep by slicing down the corncob vertically. Repeat this on the other 3 sides and season the corn with salt and pepper. Then mix the ground beef with the onion, garlic, parsley, BBQ sauce, and egg yolk, and season with salt and pepper. Spread the meat mixture over two of the corn pieces and stick a popsicle stick in each.

2.2 Cover both with another corn piece and slightly press down. Brush the corn sandwiches with melted butter, place in the electric grill, and cook for 8 minutes, leaving the lid slightly open. Dip them in guacamole for an added kick!

3. Sweet Chili Chicken Corn On The Stick

You'll Need (for 2):

  • 1 cooked corncob
  • 3 green onion leaves
  • salt & pepper to taste
  • 2 chicken breasts
  • 2 tbsp sweet chili sauce
  • 2 tbsp melted butter
  • 2 popsicle sticks

Here's How:

3.1 Cut the corn kernels off in one clean sweep by slicing down the corncob vertically. Repeat this on the other 3 sides and season the corn with salt and pepper. Cut 3 leaves off the green onion, soak them in hot water, rinse under cold water, and cut them in half for a total of 6 strips.

3.2 Stick the popsicle sticks in the chicken breasts, season with salt and pepper, stick them on the electric grill, and cook 2 minutes.

3.3 Lay out 3 strips of green onion, place a piece of corn on top, and place a chicken breast on the corn.

3.4 Spread the sweet chili sauce over the chicken, cover with a piece of corn, and wrap the green onion around the sandwich.

3.5 Brush the corn sandwiches with melted butter, place in the electric grill, and cook for 8 minutes, leaving the lid slightly open. Feel free to top with even more sweet chili sauce!
