1. Egg-In-A-Hole Beef Boats
You'll Need (for 5):
For the beef boats:
- 2 lbs ground beef
- 1 onion
- ¾ cup shredded cheese
- 2 garlic cloves
- 3 scallions, sliced
- 2½ cups parsley
- 2 tbsp bread crumbs
- 1 tsp paprika
- 2 tbsp soy sauce
- 3 tbsp water
- salt & pepper to taste
For the topping:
- 5 eggs
Here's How:
1.1 Preheat the oven to 350°F. Add the ground beef and the rest of the ingredients to a bowl and mix everything well.
1.2 Form the ground beef mass into 5 boats and place them on a sheet pan lined with parchment paper. Use your fingers to create an indentation in the middle of each boat.
1.3 Carefully crack an egg into each boat.
1.4 Carefully transfer the pan to the oven and cook for 30 minutes.
2. Chicken Parsley Hamburger Boats
You'll Need (for 5):
For the beef patties:
- 1¼ lb ground beef
- ½ cup rolled oats
- 1 egg
- salt & pepper to taste
For the chicken parsley topping:
- 12 oz chicken breast
- 2½ cups parsley
- ¾ cup shredded cheese
- 2 garlic cloves
- 1 tbsp sour cream
Here's How:
2.1 Preheat the oven to 350°F. Combine the rolled oats, egg, and ground beef, season with salt and pepper, and form 5 patties from the mixture. Sightly flatten the patties and place them on a sheet pan lined with parchment paper.
2.2 Press the bottom of a glass into the patties to create an indentation.
2.3 For the topping, add the chicken breast, parsley, cheese, garlic cloves, and sour cream to a blender and mix well.
2.4 Spoon 1-2 tablespoons of the chicken parsley topping into the indentations in the patties and smooth them out.
