A delicious alternative: Zucchini Pasta with Shrimp

If you're looking to cut those calories, but still find yourself longing for a piping hot plate of pasta, it's time to hop on the veggie noodle train. Who would've guessed that pasta made from veggies would be so popular? Just one bite, and you'll find out why: 

You will need (for 2 portions):

  • 2 large zucchinis
  • 6-9 jumbo shrimp
  • 1 bell pepper
  • salt
  • pepper
  • 1 garlic clove
  • 1 tbsp lemon juice
  • 2 tbsp olive oil

Here's how:

  1. Using a peeler, cut the zucchini into thin strips.
  2. Cut the bell pepper into thin strips as well. 
  3. Place the veggies into a baking dish, and add the rest of the ingredients. Mix well. 
  4. Bake for 8-9 minutes at 400°F.
  5. Serve hot!

While nothing will ever fully replace the real thing, this low-carb dish is certainly a delicious and guilt-free alternative. Try using other options, like sweet potatoes, carrots, or butternut squash. Pretty soon, you may find yourself forgetting all about flour-based pasta. Wow!
