Brightly patterned Strawberry Cheesecake Roll with pink polka dots

The creation of the perfect sponge roll is not without its challenges: the sponge mix has to be particularly fluffy and anyone who doesn't roll the sponge up as soon as it's baked faces the prospect of the cake cracking. But now you know the two biggest challenges, you can skilfully avoid them and bake what will probably be the most impressive sponge roll of your life.

You'll need:

For the polka dots:

  • 1 egg white
  • 2½ tbsp icing sugar
  • ⅓ cup flour
  • 1½ tbsp butter
  • pink food coloring

For the sponge:

  • 2 eggs
  • ½ cup sugar
  • 1 cup flour
  • ½ tsp baking powder
  • 1 tsp vanilla flavoring
  • 1 pinch salt

For the filling:

  • 1 cup cream cheese
  • 2½ tbsp icing sugar
  • 1 tsp vanilla flavoring
  • 3.5 oz strawberries

Here's how:

  1. Mix the egg white, icing sugar and flour together. Then add the butter. Dip the tip of a kebab skewer in food coloring and then hold it in the batter while you mix. Add more coloring as required for a more intense color.
  2. Put the mixture in an icing bag and squeeze out spots of dough of different sizes here and there into a baking pan lined with baking parchment.
  3. Now for the sponge. Beat the eggs and sugar with an electric whisk until they are frothy. Add all the other ingredients, then fold them in carefully with a spatula.
  4. Pour the batter as equally as possible over your pink circles. Carefully fill in any gaps using a spatula. The sponge batter is more fluid than the one used for dots, so your brightly-colored spots will hold their shape. Now bake for 10 minutes at 360°F.
  5. As soon as the baking is done, place the sponge spotted side down on a dampened dish cloth and roll it up with the cloth forming an intermediate layer. Let the roll cool completely. Only then can you roll it out again. This is how you make sure that the sponge won't break when you roll it with the filling inside.
  6. Mix cream cheese, icing sugar and vanilla flavoring into a cream and spread it evenly over the sponge. Cut the strawberries into thin slices and place them on the cream filling. Finally, roll the sponge back up.

You can prepare the bright and cheerful dots in any color you like. Really keen cake enthusiasts can use various colors at the same time to create a rainbow roll. And of course you can also adjust the filling too, with a mix of different fruits. So what are you waiting for?
