Some of us tend to forget that there's a world of amazing culinary ideas and exotic flavors out there and its just begging to be explored. With this in mind, we've taken a simple chicken breast and done something a bit different with it...
You'll need (for 2 portions):
- 2 chicken breasts
- salt and pepper
- olive oil
- 2.5 oz fresh spinach
- 1 oz ricotta cheese
- 1 oz grated cheddar cheese
- paprika powder
- Make evenly-spaced widthwise slits in the top of the chicken breast and sprinkle on salt and pepper.
- Heat the olive oil in a pan and add the spinach. Once it has wilted, add some salt and pepper. Now mix in the ricotta cheese.
- Spoon the spinach mixture into the slits in the chicken breast. Cover the breasts with cheddar cheese and sprinkle with paprika. Bake in the oven for 20 minutes at 350°F.
