Rope Sausage Pie: A true rainy day savior
When the sun's out, there's nothing better than firing up the grill and inviting a few friends over to enjoy the spoils from your latest trip to the butcher. Say what you like, but sausages taste best straight off the barbecue — you just can't beat the smokey aroma and crispy finish that has you coming back from seconds (and thirds!). But sadly the weather doesn't always like to play ball, so we need to come up with a decent back-up plan to ensure good meat doesn't go to waste. To alleviate disappointment on rainy days, we often turn to pie as a source of comfort, so why not make one that captures that great smoky, sausage flavor? Here's one big enough to share with all your friends and family. All you'll need is half a loaf of bread, rope sausage, and some of your usual BBQ condiments to create this hearty delight.
- 1/2 loaf dark bread
- 2 cooked potatoes, sliced
- 3 pickles, sliced
- 1 red onion, diced
- 4 rope sausages
- 3 eggs
- 1 cup cream
- salt and pepper
- 1 tbsp mustard
Fold a piece of baking paper into a funnel shape, place its point at the center of a pie pan, and cut away any remaining baking paper. Once you fold out the baking paper, it should be the perfect size for the pan.
Now place two slices of bread on the bottom of the pan before adding half slices along its edge. Then place slices of potato on the bottom of the pie.
Next, add a layer of pickles and diced onions.
Now place the rope sausages on top of the filling, going from the center outwards.
All we need now is a creamy sauce. For this, mix the eggs, cream, and mustard before seasoning.
Pour the sauce over the pie and bake at 350 F for 30 minutes.
There we have it — sausage can taste just as great from the oven as from the grill. With this reliable recipe, you'll no longer need to cancel your weekend garden parties when the storm clouds roll in. Disaster averted!
