Potato Salad Cake With A Hot Dog Border

Potato salad is a welcome addition to any picnic, but add some hot dogs to the mix and you've got yourself a whole new dish! So if you're looking for something a little different, this savory cake could be just the thing.

Yield: 1
Prep Time: 15 minutes
Cooking Time: 20 minutes

You'll Need:

For the potato salad:

  • 2 lbs potatoes
  • 1 apple
  • 5 baby dill pickles
  • 1 red onion
  • ½ cup cream cheese
  • ⅓ cup mayonnaise
  • salt & pepper to taste

For the topping:

  • pickle slices
  • fresh parsley leaves
  • 1 apple rose

For the border:

  • 7 hot dogs

Here's How:

  1. For the potato salad, peel the potatoes and boil them in lightly salted water. Dice the boiled potatoes, apple, baby dill pickles, and red onion and mix them together with the cream cheese, mayonnaise, salt, and pepper.
  2. Remove the base from a springform pan and place the ring on a plate. Spoon the potato salad into the springform ring, smooth out the top, and arrange pickle slices in a spiral pattern on top. Refrigerate the plate for 2 hours and then remove the springform ring.
  3. Place the parsley leaves on top of the potato salad cake. Arrange thin apple slices in the shape of a rose and place the apple rose in the middle of the parsley leaves.
  4. Cut the cooked hot dogs in half horizontally, and then cut those pieces in half lengthwise. Arrange the quartered hot dogs around the potato salad cake as a border.

How often do you get a cake designed for people without a sweet tooth? It may look unusual, but at least this recipe gives those savory lovers something to really get their teeth into!
