A fresh new look: Fried Egg in a Pepper Ring

Whether scrambled, fried, poached, or hard-boiled, eggs have a permanent place on the breakfast table. Shake up your morning with this ingenious idea: 

You will need:

  • 1 bell pepper
  • 1 tbsp butter
  • 1 medium-sized tomato
  • 1 egg
  • salt and pepper
  • fresh dill

Here's how:

  1. Cut off the top and bottom of the pepper, remove the seeds, and cut into thick rings. 
  2. Melt the butter in a pan and lightly cook both sides of a pepper ring. Place a slice of tomato inside the ring, and pour your egg on top. Season with salt and pepper. 
  3. Cover the pan and let cook for 10-12 minutes. Finally, season with dill and serve.

Not only do the fresh veggies add wonderful flavor, they also keep the egg beautifully contained. Good morning!
