Fresh and healthy: one-pot pasta!

For those who balance work and family, soups, stews, and casseroles tend to be popular dinner choices. They can be pre-cooked and frozen, and require little cleanup. Moreover, they can also be quite easy to prepare. Why not prepare a pasta dish in this manner? This recipe requires one pot, saves time and water, and delivers a meal that's packed full of vegetable power! 

You will need:

  • 150 g spaghetti
  • 1/2 cup mixed bell peppers
  • 1/3 cup zucchini
  • 1/2 red onion
  • 1/2 cup broccoli
  • 1/2 cup eggplant
  • 5 cherry tomatoes 
  • 1 oz arugula
  • 1 and 1/2 cups water
  • 1/2 cup white wine
  • 3 tbsp. vinegar
  • pinch of salt
  • 2 garlic cloves
  • 1 tbsp. paprika powder
  • 2 tbsp. olive oil

Here's how:

  1. Wash all vegetables and place them in a pot, followed by the dry spaghetti noodles. Add the liquid ingredients, as well as the spices. 
  2. Bring to a boil, and stir the ingredients together. Now cover the pot and let simmer for 8 minutes.
