Hidden secret: mini chocolate molten cakes

There are more recipes for chocolate cake than there is sand at the beach. The only difference: chocolate cake is always welcome, whereas sand? Not so much. Most people would gladly accept a slice anywhere, and at any hour of the day. And if the chocolate cake happens to be warm, with a sweet, molten center? Shall we go on?

You will need (for six servings):

  • 1 stick butter
  • 3 oz dark chocolate
  • 1/2 cup sugar
  • 4 eggs
  • 1 tbsp. baking cocoa
  • 1/3 cup flour

Here's how:

  1. Put the butter and the chopped chocolate into a bowl that sits over a pot of boiling water. The steam will gently melt the chocolate, so that you can easily mix it with the butter.
  2. In a second bowl, beat the egg and sugar until frothy. Add the cocoa along with the flour, and beat until smooth. Pour in the melted butter and chocolate mixture and mix well.
  3. Transfer the mixture to a greased, six-cup muffin pan and bake for seven minutes at 430 °F.

To serve, place the cakes upside down on a plate and sprinkle with powdered sugar. Now sit back and enjoy. That warm chocolate river flowing from the center of the cake wants nothing more than to make your taste buds happy!
