Warm treat for a cold day: Cheesecake in an Apple

With a New Year comes new resolutions. And after a week (or month) of seasonal goodies, often those resolutions inevitably concern one’s diet. But while you’re still celebrating the arrival of 2017, perhaps one more treat is in order. Love watching the ball drop in Times Square? With this desert, you can pay homage to the Big Apple, and its world famous cheesecake. 

You will need (for 2 servings):

  • 2 red apples
  • 1/4 stick melted butter
  • 1 1/2 tbsp brown sugar
  • 1 tsp cinnamon
  • 7 oz cream cheese
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/4 cup milk
  • cookie crumbs

Here's how:

  1. Cut off the tops of the apples and hollow them out using a knife and spoon. Be careful not to damage the skin. 
  2. In a small bowl, mix the melted butter, brown sugar, and cinnamon and brush the mixture onto the inside of the apples. 
  3. In another bowl, mix the cream cheese, powdered sugar, vanilla extract, and milk. 
  4. Fill the apples with the cream cheese mixture, sprinkle some cookie crumbs on top,  and bake in the oven at 320 °F for 15 minutes. 

The New Year is off to a sweet, and somewhat healthy start, right? After all, an apple a day does keep the doctor away!
