This problem can be avoided by simply replacing the frying pan with a muffin tin!
You will need (for 6 muffins):
- 3.5 oz fresh spinach
- 1 tomato, diced
- 1 and 1/4 cups egg whites
- salt and pepper
- Brush the bottom of the muffin pan with a bit of oil. In each cup, add a few spinach leaves followed by some diced tomato.
- Pour the egg whites into each cup, and season with salt and pepper.
- Now bake your "muffins" for 15 minutes at 350 °F.
