Place veggies in the muffin pan and pour egg whites on top. In the blink of an eye, your breakfast is on the table.

There's nothing much better than an omelette for breakfast. But although they look gorgeous and perfectly arranged in the pan, flipping them and transferring them to a place often results in a messy, albeit delicious disaster. This problem can be avoided by simply replacing the frying pan with a muffin tin!

You will need (for 6 muffins):

  • oil
  • 3.5 oz fresh spinach
  • 1 tomato, diced
  • 1 and 1/4 cups egg whites
  • salt and pepper

Here's how:

  1. Brush the bottom of the muffin pan with a bit of oil. In each cup, add a few spinach leaves followed by some diced tomato. 
  2. Pour the egg whites into each cup, and season with salt and pepper. 
  3. Now bake your "muffins" for 15 minutes at 350 °F.
