Bacon and Cheddar Potato Skins: Make Something Good Even Better

In the world of culinary delights there are combinations that seem to taste magical, yielding new recipes again and again, each more delicious than the last. Potatoes and cheese complement each other perfectly, even more so when that cheese is melted. Add in some bacon and you make it even better. How can you resist when it tastes this good?

You'll Need (for 6 portions):

  • 6 slices bacon
  • 1 tbsp barbecue sauce
  • 3 baked potatoes
  • 1/2 cup yogurt
  • 2 tbsp chives, chopped
  • 3.5 oz cheddar, grated
  • salt and pepper
  • 2 oz mozzarella, grated

Here's How:

  1. Coat the bacon strips with barbecue sauce and fry them until crispy on both sides.
  2. Bake the potatoes in an oven at 390°F for 45 minutes. Once they've cooled, cut them in half and remove the soft insides, without damaging the skins.
  3. Mash and mix the potato insides with the yogurt, chives, and cheddar. Season the mixture with salt and pepper, tear or chop the bacon into small pieces then add that too.
  4. Fill the hollowed-out potato skins with the mixture, place them in a baking tray and sprinkle mozzarella on top. Bake the potatoes in the oven for another 15 minutes at 350°F.
